Jal Jeera (Spiced Cumin Drink)
Why this recipe works
- Bright and refreshing: Cold water, mint and citrus keep the drink sharp, aromatic and cooling.
- Balanced tang: Tamarind and lemon provide acidity, while black salt and cumin add savoury depth.
- Fast no-cook method: Everything is blended and diluted with cold water, making it ready in about 10 minutes.

Ingredient notes
- Use good tamarind pulp: Tamarind gives jal jeera its distinctive sourness, so choose a pulp with a clean, fruity tang rather than a dull or overly bitter flavour.
- Black salt is key: Kala namak brings the sulphurous, savoury note associated with classic jal jeera. Add more gradually if you want a saltier finish.
- Use tender mint stems: Tender mint stems can be blended with the leaves for extra aroma, but avoid thick woody stems, which can taste harsh.
Adjust the heat
- For a gentler drink: Reduce the black pepper and lean on extra mint and citrus for brightness without much heat.
- For more warmth: Add a little more black pepper, or use the suggested ground ginger swap for a warmer, less peppery style.
Make-ahead tips
- Make it ahead: Prepare the jal jeera without ice and keep it covered in the fridge for up to 2 days.
- Serve properly cold: Chill the drink before serving if the water was not very cold, then pour it over fresh ice just before drinking.
- Stir before pouring: The spice and mint can settle as the drink stands, so stir well before serving each batch.
Serving ideas
- Serve with snacks: Pair with savoury Indian snacks such as chaat, pakoras or crisp fried bites where the tangy drink cuts through richness.
- Fresh finish: A few mint leaves or a thin slice of lemon add a clean aroma and make the drink look brighter in the glass.

Ingredients
Instructions
- Put the tamarind pulp in a blender with 250 ml of the water and blend until smooth. Add the mint leaves, squeeze in the lemon juice, then add the cumin, black salt and black pepper. Blend again until the mint is finely broken down.
- Pour the mixture into a jug, then stir in the remaining 750 ml water. Taste and adjust with a pinch more black salt if you want it saltier, or a little more lemon juice if you want it sharper. Chill for a few minutes if your water was not very cold.
- Divide the ice cubes between 4 glasses. Stir the jal jeera well, then pour over the ice. Serve straight away while it is properly cold.
Recipe notes
Tips
- For the best flavour, use very cold water so the drink stays bright and refreshing without needing extra chilling time.
- If you prefer a smoother drink, blend for an extra 30 seconds, then let it stand for 2 minutes so the froth settles before pouring.
Substitutions
- Replace lemon with lime for a slightly more floral, sharper citrus note.
- Replace black pepper with a pinch of ground ginger for a warmer, less peppery heat.
Storage
- Refrigerate up to 2 days
- Store the jal jeera (without ice) in a covered jug in the fridge for up to 2 days. Stir well before serving, then pour over fresh ice cubes.
