Sweet Soy Braised Tofu (Hong Shao Tofu)

Hong shao tofu takes the familiar Chinese red-braising approach and applies it to firm tofu, giving the pieces a glossy, soy-rich coating rather than a heavy stew. The tofu is first pan-fried so the edges turn golden and lightly crisp, then gently simmered with light and dark soy sauce, Shaoxing wine, ginger, garlic and a little sugar. The result is savoury, subtly sweet and deeply umami, with a sauce thick enough to cling to each cube. Served hot with steamed rice, it makes a satisfying vegan dinner that feels generous without needing a long cooking time.

Why this recipe works

  • Deep savoury flavour: Light soy, dark soy and Shaoxing wine build a rounded sauce with sweetness, saltiness and aromatic depth.
  • Better tofu texture: Pan-frying the tofu before braising gives the pieces a golden surface that holds up well in the sauce.
  • Weeknight-friendly: The dish uses a short fry followed by a brief simmer, keeping the total cooking time manageable without sacrificing flavour.

Authenticity notes

  • Hong shao style: Hong shao cooking is recognised for its glossy, soy-based braise, often balancing savoury depth with a little sweetness.
  • Dark soy matters: Dark soy sauce gives the sauce its deeper colour and subtle molasses-like richness, while light soy provides the main seasoning.
  • Everyday serving: This style of tofu is well suited to a simple rice meal, where the reduced sauce can be spooned over the grains.

Texture tips

  • Dry the tofu well: Patting the tofu thoroughly dry helps it brown in the pan rather than steam.
  • Turn gently: Use a spatula to turn the tofu carefully during frying and simmering so the cubes keep their shape.
  • Control the glaze: Let the sauce reduce only until it lightly coats the tofu; it will continue to thicken slightly as it stands.

Common mistakes

  • Crowding the tofu: If the pieces are packed too tightly, they are more likely to steam and stick instead of browning evenly.
  • Boiling the sauce hard: A vigorous boil can break up the tofu and reduce the sauce too quickly; keep the braise at a gentle simmer.
  • Letting the sauce get too thick: If the glaze tightens as it sits, loosen it with a splash of water and warm gently before serving.

Make-ahead tips

  • Good for leftovers: Cool completely, then refrigerate in a sealed container for up to 3 days.
  • Freezer-friendly: Freeze after cooking for up to 2 months, then defrost overnight in the fridge before reheating.
  • Reheat gently: Warm in a frying pan with a splash of water until piping hot, as the sauce thickens once chilled.

  1. Pat the tofu dry, then cut into bite-sized cubes. Finely slice the ginger and garlic, and slice the spring onions, keeping the whites and greens separate.
  2. Whisk the light soy sauce, dark soy sauce, Shaoxing wine, caster sugar and vegetable stock in a bowl. In a separate small bowl, whisk the cornflour with 2 tbsp water from the measured stock mixture until smooth, then whisk it back into the sauce.
  3. Heat the rapeseed oil in a large frying pan over medium-high heat. Add the tofu and pan-fry for 6 to 8 minutes, turning carefully, until golden on most sides.
  4. Push the tofu to the edges of the pan and add the ginger, garlic and spring onion whites to the centre. Stir-fry for 30 to 60 seconds until fragrant, then pour in the sauce and bring to a gentle simmer.
  5. Simmer for 4 to 6 minutes, turning the tofu once or twice, until the sauce is glossy and lightly thickened and coats the tofu. Take off the heat and stir in the toasted sesame oil and the spring onion greens.
  6. Serve hot, spooning plenty of sauce over the tofu. If the sauce thickens too much as it sits, loosen it with a splash of water and warm gently.

Steamed rice

Tips

  • For the best texture, take a minute to pat the tofu really dry before frying so it browns rather than steams.
  • Keep the simmer gentle once the sauce goes in; a hard boil can make the tofu break up and the sauce reduce too quickly.

Substitutions

  • Replace Shaoxing Cooking Wine with dry sherry for a similar aroma.
  • Replace rapeseed oil with vegetable oil for frying.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a frying pan with a splash of water until piping hot; the sauce will thicken as it cools. Freeze for up to 2 months, defrost overnight in the fridge, then reheat as above.
