Uruguayan Chivito Plate (Steak Sandwich Platter)

Uruguay’s chivito is a generously filled steak sandwich, often served as a full plate with chips rather than a simple handheld snack. The defining combination is thin, quickly seared beef with cured ham, melting cheese, a fried egg and fresh salad elements, giving it the feel of a steakhouse sandwich with diner-style abundance. In this platter version, garlic mayonnaise adds richness while tomato and romaine keep the filling fresh against the hot steak and mozzarella. It is hearty enough for dinner, best assembled just before serving so the bread stays crusty, the egg is freshly fried and the chips remain crisp.

Why this recipe works

  • Generous savoury layers: Seared steak, cured ham, melted cheese, garlic mayonnaise and a fried egg build the rich, distinctive flavour of a classic chivito.
  • Strong texture contrast: Crusty bread, juicy sliced steak, creamy cheese, crisp lettuce and golden chips keep each bite varied rather than heavy.
  • Efficient pan cooking: The chips, steak, cheese-filled rolls and eggs are cooked in the same frying pan, keeping the method practical for a hearty meal.

Authenticity notes

  • Uruguayan sandwich style: Chivito is a recognisable Uruguayan steak sandwich, typically built with beef, ham, cheese and egg rather than served as a simple steak roll.
  • Served with chips: Chips alongside are part of the generous platter-style presentation and help make the sandwich feel like a complete meal.

Texture tips

  • Slice the steak thinly: Rest the steak briefly, then slice it across the grain for a more tender bite inside the sandwich.
  • Keep the salad fresh: Serve the tomato and lettuce on the side or add them just before eating so the bread stays crusty.
  • Melt the cheese gently: Warm the filled rolls over low heat so the mozzarella softens without drying out the steak or over-toasting the bread.

Make-ahead tips

  • Store parts separately: Keep the steak, chips and salad components separate in the fridge so the bread and vegetables do not soften.
  • Reheat before assembling: Reheat the steak and chips in a 200°C (390°F) oven until piping hot, then assemble the sandwich fresh.
  • Best finished fresh: Fry the eggs to order and assemble just before serving for the best contrast between hot fillings and crisp bread.

  1. Cut the potato into chips about 1 cm thick. Pat dry well, then season with 0.5 tsp of the salt and a pinch of the pepper.
  2. Heat 4 tbsp of the sunflower oil in a large frying pan over medium-high heat. Fry the chips for 12 to 15 minutes, turning often, until golden and tender; transfer to a plate and season with another pinch of salt.
  3. Finely grate the garlic into the mayonnaise and set aside. Slice the tomato and set out the lettuce leaves for serving.
  4. Season the steak on both sides with the remaining salt and pepper. In the same pan, add 1 tbsp sunflower oil if the pan looks dry, then sear the steak over high heat for 1 to 2 minutes per side until browned and cooked to your liking. Rest on a board for 3 minutes, then slice thinly.
  5. Split the crusty white bread and spread the garlic mayonnaise over the cut sides. Layer in the sliced steak, cured ham and mozzarella, then return the filled rolls to the pan on low heat for 2 to 3 minutes, covered if you can, until the mozzarella is melting.
  6. Fry the eggs in the pan over medium heat until the whites are set and the edges are crisp, 2 to 3 minutes. Serve each sandwich topped with a fried egg, with the tomato and lettuce on the side and the chips alongside.

Recipe notes

Tips

  • For a more tender bite, slice the steak across the grain and keep it thin.
  • If you prefer a runny yolk, keep the heat at medium and take the eggs off as soon as the whites set; for a firmer yolk, cover the pan for the last minute.
  • Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, cook the eggs until both white and yolk are fully set.

Substitutions

  • Replace Beef rump steak with beef sirloin steak for a slightly more tender chivito.
  • Replace Mozzarella with provolone cheese for a sharper, more traditional-style melt.
  • Replace Mayonnaise with aioli for a stronger garlic flavour.

Storage

  • Refrigerate up to 2 days
  • Store the steak, chips, and salad components separately where possible. Reheat the steak and chips in a 200°C (390°F) oven until piping hot; assemble the sandwich fresh and fry the eggs to order for best results.
