Pasta al Pesto Trapanese (Sicilian Almond Pesto Pasta)
Why this recipe works
- Fast fresh sauce: The pesto is blended raw while the pasta cooks, keeping the total time short without sacrificing flavour.
- Bright but savoury: Ripe tomatoes bring freshness and gentle acidity, while almonds, olive oil and pecorino add body and depth.
- No direct heat on the pesto: Tossing the sauce with hot pasta and pasta water preserves the basil’s aroma and helps the pesto coat the spaghetti.

Authenticity notes
- Trapani-style pesto: Pesto Trapanese is associated with western Sicily and is distinct from Ligurian pesto through its use of tomatoes and almonds.
- Kept raw: The sauce is not cooked separately; the warmth of the pasta is enough to bring the ingredients together.
Ingredient notes
- Choose ripe tomatoes: Very ripe tomatoes give the pesto sweetness and a fuller texture; underripe tomatoes can make the sauce taste thin and sharp.
- Check the almonds: Use fresh-tasting almonds, as stale nuts can make the pesto bitter or flat.
- Account for pecorino: Pecorino Romano is assertively salty, so taste before adding any extra seasoning at the end.
Timing notes
- Serve straight away: The pesto coats best when tossed with hot pasta and eaten immediately, before the basil flavour dulls.
- Use the pasta time well: Prepare the tomato, basil and almond pesto while the water comes to the boil and the spaghetti cooks.
Serving ideas
- Serve with bread: Crusty bread works well for catching any tomato-rich pesto left in the bowl.
- Finish simply: A final grating of pecorino and a little black pepper keep the finish savoury without masking the basil.

Ingredients
Instructions
- Bring a large pot of water to the boil and season it with 1.5 tsp of the fine sea salt. Meanwhile, cut the tomatoes into chunks and pick the basil leaves.
- In a food processor, pulse the almonds and garlic until finely chopped. Add the tomatoes, basil, extra virgin olive oil and the remaining 0.5 tsp fine sea salt, then pulse to a chunky-smooth pesto; scrape down the bowl as needed.
- Cook the spaghetti until al dente. Reserve 150 ml of the pasta water, then drain.
- Return the spaghetti to the warm pot and add the pesto. Toss well, loosening with a splash of the reserved pasta water until the sauce lightly coats the pasta.
- Finely grate in most of the pecorino Romano cheese and toss again. Serve with the remaining pecorino and black pepper over the top.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the pesto raw and fresh: avoid heating it directly, and rely on the warmth of the pasta plus a little pasta water to bring it together.
- For a sweeter, less watery sauce, use very ripe tomatoes and remove any tough cores before blending.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, wash the basil and tomatoes thoroughly before using.
Substitutions
- Replace Pecorino Romano cheese with Parmesan for a milder, less salty finish.
- Replace Almonds with Pistachios for a more buttery, distinctly Sicilian-style pesto.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly and refrigerate in a sealed container. Reheat gently with a splash of water or extra virgin olive oil, or eat at room temperature; the basil flavour is best when not overheated.
