Pabellón Criollo Bowl (Venezuelan Shredded Beef with Rice, Beans and Plantain)

Pabellón criollo brings together the defining elements of a classic Venezuelan plate: tender shredded beef, white rice, black beans and sweet ripe plantain. In this bowl version, the brisket is gently braised until it pulls apart, then served warm with fluffy rice and spoonable beans for a hearty, well-rounded lunch. The fried plantain is essential, adding caramelised sweetness and soft edges against the savoury beef, while a simple tomato and onion topping gives the bowl a fresh finish. It is generous, comforting and easy to adapt, with each component kept distinct so every spoonful has a mix of richness, sweetness and freshness.

Why this recipe works

  • Balanced components: Rich shredded beef, mild beans, plain rice and sweet plantain each bring a distinct flavour, so the bowl feels complete without a heavy sauce.
  • Soft, crisp and tender: Tender braised beef and fluffy rice contrast with caramelised plantain edges and a fresh tomato-onion topping.
  • Good for prep: The beef, beans and rice can be prepared ahead and reheated separately, while the plantain is best fried fresh for the right texture.

Authenticity notes

  • Classic structure: Pabellón criollo is traditionally built around shredded beef, rice, black beans and ripe plantain, with the contrast between savoury and sweet central to the dish.
  • Bowl-style serving: Serving the components in bowls keeps the familiar elements intact while making the dish practical for everyday lunches or portioned meals.

Ingredient notes

  • Choose very ripe plantain: Look for plantain with dark patches on the skin; it will fry softer and develop a deeper caramelised sweetness.
  • Use a shreddable cut: Brisket works well because slow simmering turns it tender enough to pull apart. Chuck roast is a suitable alternative with a similar texture.

Texture tips

  • Cook until fully shreddable: The beef should pull apart easily with forks. If it resists, continue simmering gently until the fibres soften.
  • Keep the rice fluffy: Let the rice rest covered after cooking, then fluff it before serving so it stays separate rather than heavy.

Make-ahead tips

  • Store separately: Keep the beef, rice and beans in separate containers so each component reheats evenly and the rice does not absorb too much moisture.
  • Freeze the beef: Freeze the shredded beef with a little cooking liquid to help it stay moist, then reheat until piping hot before serving.
  • Fry plantain fresh: Plantain has the best soft centre and caramelised edges when cooked just before serving.

  1. Put the brisket in a dutch oven and add the medium onion, peeled and quartered, then pour in the water. Bring to a gentle simmer, cover, and cook on low for 75 minutes, turning the brisket once, until very tender. Lift the brisket out to a board and keep the cooking liquid in the pot.
  2. While the beef cooks, rinse the rice until the water runs mostly clear. Put the rice and water in a saucepan, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave covered for 10 minutes, then fluff with a fork.
  3. Drain and rinse the black beans, then warm them in a small saucepan with a splash of water until hot. Taste and add a little more water if you want them looser for spooning. Keep warm on low.
  4. Peel the plantain and slice it on a slight diagonal into 1 cm pieces. Heat the vegetable oil in a frying pan over medium heat, then fry the plantain in a single layer for 2 to 3 minutes per side until deep golden and caramelised. Transfer to a plate and keep warm.
  5. Dice the tomatoes and finely chop the small onion, then mix together for a simple topping. Shred the brisket with two forks, then return it to the dutch oven with a few spoonfuls of the cooking liquid and warm through for 2 minutes. Spoon rice into two bowls, add the beans and shredded beef, top with fried plantain and finish with the tomato and onion topping.

Recipe notes

Tips

  • For the best sweet contrast, use a ripe plantain with lots of black patches on the skin so it caramelises quickly in the pan.
  • If serving to anyone who is pregnant, elderly, or immunocompromised, make sure the beef is cooked until very tender and piping hot throughout before serving.

Substitutions

  • Replace Beef brisket with Beef chuck roast for a similar shreddable texture.
  • Replace Long-grain white rice with Brown rice, increasing the cooking time and water until the rice is tender.

Storage

  • Refrigerate up to 3 days
  • Cool the beef, rice, and beans quickly, then refrigerate in sealed containers. Reheat the beef with a splash of its cooking liquid in a saucepan until piping hot; reheat rice and beans separately until piping hot. Freeze the shredded beef (with a little cooking liquid) for best texture; fry fresh plantain when serving.
