Risotto all’Astice (Lobster Risotto)
Why this recipe works
- Classic risotto method: Adding hot stock gradually helps the arborio rice release starch, creating a creamy texture without needing cream.
- Layered seafood flavour: Fish stock, lobster juices, white wine and tomato purée build depth while keeping the lobster at the centre of the dish.
- Bright finish: Lemon zest and a little lemon juice lift the butter and parmesan, keeping the risotto rich but not heavy.

Timing notes
- Serve straight away: Risotto is at its best as soon as it is finished, while the rice is still loose and the lobster is just warmed through.
- Brief rest: A short covered rest lets the butter and cheese settle into the rice before the final adjustment with hot stock.
- Prepare before cooking the rice: Have the lobster meat, grated parmesan, lemon zest and parsley ready before starting the risotto, as the final stage moves quickly.
Ingredient notes
- Use a good fish stock: The stock is absorbed directly into the rice, so a clean, well-seasoned fish stock makes a noticeable difference to the final flavour.
- Save the lobster juices: Any juices from cracking the shells can be stirred into the hot stock to reinforce the shellfish flavour.
- Add lemon gradually: Lemon should brighten the risotto rather than dominate it, so add the juice to taste at the end.
Common mistakes
- Adding stock too quickly: Pouring in too much stock at once can make the rice boil rather than release starch steadily. Add it gradually and let each addition mostly absorb.
- Overcooking the lobster: The lobster is already cooked before it goes into the risotto, so it only needs a few minutes to warm through.
- Serving it too stiff: The finished risotto should gently settle on the plate. If it stands in a mound, loosen it with a splash of hot stock.
Serving ideas
- Keep sides simple: A crisp green salad or lightly dressed fennel works well alongside the richness of the rice and lobster.
- Choose a dry white wine: A crisp Italian white or other dry, mineral white wine suits the seafood, lemon and buttery finish.
- Finish with herbs: Parsley adds freshness without competing with the lobster; add it just before serving for the cleanest flavour.

Ingredients
Instructions
- Pour the fish stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. This is what gives risotto its creamy texture without overcooking the rice.
- Bring a large pot of salted water to the boil and cook the lobsters for 8 to 10 minutes, until bright red and just cooked through. Lift out with tongs and leave until cool enough to handle.
- Twist off the claws and tail, then crack the shells and remove the meat; cut the meat into bite-sized pieces and set aside. Keep any shell juices and stir them into the hot stock for extra flavour.
- Finely chop the onion and garlic. Finely grate the parmesan, zest the lemon, then cut the lemon in half for juicing later; finely chop the parsley.
- Heat the olive oil with 20 g of the butter in a large frying pan over a medium heat. Add the onion with a pinch of the salt and cook for 6 to 8 minutes until soft and translucent, then stir in the garlic for 30 seconds.
- Add the arborio rice and stir for 2 minutes until the grains look slightly translucent at the edges. Season with the remaining salt and the black pepper.
- Pour in the white wine and cook, stirring, until it has almost completely evaporated. Stir in the tomato purée until evenly dispersed.
- Add a ladleful of hot stock and stir until it is mostly absorbed, keeping the risotto at a steady, gentle bubble. Continue adding stock a ladle at a time, stirring often, for 18 to 22 minutes until the rice is tender with a slight bite and the mixture is loose and creamy.
- Stir in the lobster meat and cook for 2 to 3 minutes, just to warm it through. Take the pan off the heat and stir in the remaining 40 g butter, the parmesan, lemon zest, and 1 to 2 tsp lemon juice to taste.
- Cover and rest for 2 minutes, then loosen with a splash of hot stock if needed so it gently settles on the plate. Serve straight away, finished with the parsley and a little extra black pepper.
Recipe notes
Tips
- Keep the stock hot and add it gradually; cold stock slows cooking and makes the texture less creamy.
- Aim for a loose, flowing finish (all’onda); if it looks stiff, stir in a final splash of hot stock just before serving.
- Shellfish can be risky for anyone who is pregnant, elderly, very young, or immunocompromised; make sure the lobster is cooked through and serve the risotto piping hot.
Substitutions
- Replace Dry White Wine with the same amount of Fish stock for an alcohol-free version.
- Replace Parmesan with Grana Padano cheese for a slightly milder, sweeter finish.
- Replace Fresh parsley with Fresh basil for a softer herb note.
Storage
- Refrigerate up to 1 days
- Cool quickly, cover, and refrigerate. Reheat gently in a saucepan with a splash of fish stock, stirring until piping hot; avoid boiling hard as the lobster can turn tough.
