Prawn Masala with Coconut Milk
Why this recipe works
- Built-in depth: Onion, ginger, garlic and ground spices are fried before the tomatoes go in, creating a more rounded masala base.
- Creamy but balanced: Coconut milk softens the heat and adds body, while tomatoes keep the sauce bright rather than heavy.
- Fast seafood cooking: The prawns are added only once the sauce is ready, so they cook quickly and stay tender.

Adjust the heat
- For a milder curry: Remove the chilli seeds and membrane, or use less chilli. The coconut milk will also soften the heat as the sauce simmers.
- For more heat: Keep the chilli seeds in, or add a little extra fresh chilli when frying the aromatics so the heat blends into the masala.
Timing notes
- Reduce the sauce before adding prawns: Let the tomato masala thicken first; adding prawns too early can overcook them before the sauce has developed.
- Best served straight away: Prawns are at their best soon after cooking, while still tender and juicy in the hot sauce.
Common mistakes
- Do not overcook the prawns: Remove the pan from the heat once the prawns are pink and just cooked through; prolonged simmering can make them rubbery.
- Keep the coconut milk gentle: Once the coconut milk is added, avoid a hard boil so the sauce stays smooth and creamy.
- Do not rush the tomato stage: The tomatoes should reduce until the masala thickens; this prevents a thin sauce and gives the spices time to settle.
Make-ahead tips
- Make the sauce ahead: The masala base can be prepared in advance and chilled before the prawns are added. Reheat it gently, then cook the prawns just before serving.
- Reheat gently: Warm leftovers over low heat until piping hot, adding a small splash of water if the sauce has thickened. Avoid boiling to help keep the prawns tender.

Instructions
- Finely chop the onion. Peel and finely grate the ginger, then crush the garlic; finely chop the green chilli (remove the seeds for less heat).
- Heat the vegetable oil in a large frying pan over medium heat. Add the onion and a pinch of the salt, then cook for 6 to 8 minutes until softened and lightly golden.
- Stir in the ginger, garlic, green chilli, ground cumin, ground coriander and ground turmeric. Cook for 1 minute, stirring constantly, until fragrant.
- Add the canned tomatoes and the remaining salt, then bring to a gentle simmer. Cook for 8 to 10 minutes, stirring occasionally, until the masala thickens and the oil begins to separate at the edges.
- Pour in the coconut milk and return to a gentle simmer. Cook for 4 to 5 minutes until the sauce looks slightly reduced and creamy.
- Add the prawns and simmer gently for 3 to 5 minutes until pink and just cooked through. Stir in the garam masala, then take off the heat and fold through most of the fresh coriander.
- Taste and adjust with a little more fine sea salt if needed. Serve hot, scattered with the remaining fresh coriander.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the heat gentle once the coconut milk is added so the sauce stays smooth and does not split.
- If your prawns are already cooked, add them at the end and warm through for 1 to 2 minutes so they stay tender.
- For anyone who is pregnant, elderly, very young, or immunocompromised, make sure the prawns are cooked until piping hot all the way through.
Substitutions
- Replace the green chili pepper with 0.5 tsp ground cumin for a milder curry with less heat.
- Replace fresh coriander with 1 tsp ground coriander stirred in at the end for a similar aroma when herbs are unavailable.
- Replace vegetable oil with olive oil for a slightly fruitier base.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat until piping hot, adding a small splash of water if the sauce has thickened; avoid boiling to keep the prawns tender.
