Finnish Salmon Soup (Lohikeitto)
Why this recipe works
- Smooth, creamy broth: Double cream enriches the fish stock without making the soup heavy, giving the broth a soft, rounded finish.
- Gentle poaching: Adding the salmon at the end lets it cook gently in the hot broth, keeping the pieces tender and intact.
- Subtle Nordic seasoning: Leek, bay, allspice and dill build flavour without overpowering the salmon.

Authenticity notes
- Finnish home-style soup: Lohikeitto is a familiar Finnish comfort dish: simple, creamy, dill-scented and focused on clean fish flavour rather than heavy seasoning.
- Dill is essential: Fresh dill is a defining flavour here, added near the end so it stays bright and aromatic.
- Serve with rye bread: A slice of dark rye bread is a natural partner for the creamy broth and tender potatoes.
Timing notes
- Prep before simmering: Cut the potatoes and salmon before starting so the soup can move smoothly from softened leek to simmered potatoes to gently cooked fish.
- Best served soon after cooking: The soup is at its best when the salmon has just turned opaque and the dill is still fresh.
Ingredient notes
- Use a good fish stock: The stock forms the base of the soup, so a clean, well-balanced fish stock will give the best flavour.
- Check the stock before salting: Fish stocks vary in saltiness; season cautiously at the start and adjust once the cream and salmon have been added.
- Rinse the leek well: Splitting the leek lengthways makes it easier to remove grit from between the layers before slicing.
Make-ahead tips
- Prepare the vegetables ahead: The leek and potatoes can be trimmed and cut in advance, then kept chilled until you are ready to cook.
- Reheat gently: Warm leftovers over low heat, stirring often, and avoid boiling so the cream stays smooth and the salmon does not become dry.

Instructions
- Trim the leek, then split lengthways and rinse well to remove any grit; slice thinly. Peel the potatoes and cut into bite-sized chunks. Cut the salmon into large pieces, about 3 cm, and keep chilled.
- Melt the butter in a large pot over medium heat, then add the leek and a pinch of the salt. Cook for 5 to 7 minutes, stirring, until softened but not browned.
- Add the potatoes, fish stock, bay leaves, allspice berries and the remaining salt. Bring to a gentle simmer, then cook for 12 to 15 minutes until the potatoes are tender.
- Lower the heat so the soup is just steaming, then stir in the double cream. Add the salmon and cook gently for 3 to 5 minutes until just opaque and tender; do not let the soup boil.
- Remove the bay leaves and allspice berries if you can find them. Stir in most of the dill, then taste and adjust with black pepper and a little more salt if needed. Ladle into bowls and finish with the remaining dill and a final grind of pepper.
Recipe notes
Tips
- Keep the heat low after adding the double cream so the soup stays smooth and the salmon remains tender.
- If your fish stock is very salty, start with half the fine sea salt, then season to taste at the end.
- For anyone who is pregnant, elderly, or immunocompromised, make sure the salmon is cooked until fully opaque and piping hot throughout.
Substitutions
- Replace Double cream with Cooking cream for a lighter soup, keeping the heat low so it does not split.
- Replace Fresh dill with Fresh chives for a milder, oniony finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat until piping hot, stirring often, and avoid boiling to keep the salmon tender and the cream smooth.
