Sheet-Pan Ratatouille

Ratatouille brings together the late-summer vegetables associated with Provençal cooking: aubergine, courgette, tomatoes, onion, garlic and herbs. In this sheet-pan version, the vegetables roast in a hot oven rather than simmering into a stew, so the edges caramelise while each ingredient keeps its own shape and character. The result is savoury, glossy and herb-scented, with sweet slumped tomatoes and tender aubergine balanced by fresh basil at the end. Serve it warm as a vegetable side, spoon it over grains or bread, or let it settle to room temperature for a relaxed light main.

Why this recipe works

  • Efficient roasting: A preheated tray helps the vegetables start browning straight away, giving better caramelisation without extra pans.
  • Distinct vegetable texture: Large-cut aubergine, courgette, tomato and onion stay recognisable rather than collapsing into a stew.
  • Flexible serving: The dish is just as useful warm as it is at room temperature, making it easy to serve as a side, light main or prepared-ahead vegetable dish.

Authenticity notes

  • A roasted adaptation: Ratatouille is usually associated with gently cooked Provençal vegetables; this sheet-pan version keeps the familiar ingredients but uses high-heat roasting for cleaner texture and deeper edges.

Texture tips

  • Avoid steaming: Spread the vegetables in a single layer so moisture can evaporate and the edges can brown.
  • Keep the pieces generous: Larger chunks of aubergine and courgette hold their shape better during roasting.
  • For a softer finish: Roast a little longer and turn the vegetables again if you prefer a more traditional, gently collapsed texture.

Ingredient notes

  • Choose firm tomatoes: Ripe but firm tomatoes give sweetness and juice without breaking down too quickly on the tray.
  • Add basil at the end: Fresh basil is best scattered over after roasting so it stays fragrant and bright.
  • Use good olive oil: The final drizzle is part of the flavour, so extra virgin olive oil gives the dish a cleaner, more rounded finish.

Make-ahead tips

  • Make ahead: Cool completely, then refrigerate in a sealed container for up to 4 days.
  • Reheat on a tray: Warm on a baking tray at 200°C (390°F) until piping hot so the vegetables keep a roasted texture.
  • Freezer-friendly: Freeze after cooking, then thaw overnight in the fridge before reheating.

  1. Heat the oven to 220°C (430°F) and set a large baking tray in the oven to preheat. Cut the aubergine and courgette into 2 to 3 cm chunks, cut the tomatoes into wedges, and cut the red onion into thick wedges. Lightly crush and peel the garlic cloves.
  2. In a large bowl, toss the aubergine, courgette, tomatoes and red onion with 4 tbsp of the extra virgin olive oil until well coated. Add the garlic and thyme sprigs and toss again. Tip everything onto the hot tray and spread into a single layer.
  3. Roast for 35 to 40 minutes, turning once halfway through, until the vegetables are tender with deep golden edges and the tomatoes have slumped but still hold some shape. If the tray looks crowded, spread the vegetables out more so they roast rather than steam. Remove and let sit for 5 minutes so the juices settle.
  4. Strip the thyme leaves from the sprigs and discard the woody stems. Tear the fresh basil over the top, then drizzle with the remaining 1 tbsp extra virgin olive oil. Serve warm or at room temperature.

Recipe notes

Tips

  • Preheating the tray helps the vegetables start caramelising as soon as they hit the pan, which keeps them distinct rather than stewed.
  • Keep the pieces fairly large so the aubergine and courgette roast and brown before they soften too much.
  • If you want a softer, more traditional texture, roast 10 minutes longer and turn twice so the vegetables break down a little more.

Substitutions

  • Replace Fresh thyme with Fresh basil for a more basil-forward finish; add half during roasting and the rest at the end.
  • Replace Red onion with Yellow onion for a slightly sweeter, milder onion flavour.
  • Replace Tomato with Roma tomato for a less juicy result and more concentrated roasting flavour.

Storage

  • Refrigerate up to 4 days
  • Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 200°C (390°F) for 10 to 15 minutes until piping hot, or enjoy at room temperature; freeze for up to 2 months and thaw overnight in the fridge before reheating.
