Zupa Grzybowa (Polish Christmas Eve Mushroom Soup)
Why this recipe works
- Deep mushroom flavour: Soaking dried forest mushrooms draws out an intense, earthy liquid that becomes the backbone of the broth.
- Clear, aromatic broth: A gentle simmer with vegetables and whole spices keeps the soup light, fragrant and clean-tasting.
- Simple but satisfying: Egg noodles add substance, while a final knob of butter rounds out the savoury mushroom flavour.

Ingredient notes
- Use dried forest mushrooms: Dried mushrooms are essential here; they give the soup its concentrated woodland flavour and dark, aromatic broth.
- Choose a good stock: Because the broth is clear and simple, the vegetable stock should taste balanced before the mushrooms are added.
- Watch for sediment: Pour the soaking liquid slowly and leave any grit behind so the finished soup stays clean and pleasant to eat.
Timing notes
- Low hands-on time: Most of the work is simple soaking, simmering and straining; the active preparation is brief.
- Serve once the noodles are tender: The soup is best ladled shortly after the noodles are cooked, while the broth is hot and the pasta still has texture.
Make-ahead tips
- Make the broth ahead: Prepare and strain the mushroom broth in advance, then cook the noodles in it just before serving.
- Keep noodles separate if storing: For the best texture, store or freeze the soup without noodles and add freshly cooked noodles when reheating.
- Reheat gently: Warm the soup on the hob until piping hot, keeping the heat controlled so the broth remains clear.
Authenticity notes
- A Wigilia-style soup: This clear, meat-free mushroom soup fits the Polish Christmas Eve tradition of serving deeply flavoured but restrained dishes.
- Clear rather than creamy: Unlike creamy mushroom soups, this version focuses on a clean broth, dried mushrooms and simple aromatics.
- Noodles in the bowl: Egg noodles are a classic way to make the broth more substantial while keeping the soup light enough for a festive meal.

Ingredients
Instructions
- Put the dried mushrooms in a bowl and cover with 500 ml of the vegetable stock. Leave to soak for 20 minutes, then lift out the mushrooms and set aside; keep the soaking liquid.
- Meanwhile, peel the onion and carrot, then cut them into large chunks; cut the celery into large pieces. Add the vegetables to a stockpot with the remaining vegetable stock, bay leaves, allspice berries, black peppercorns, and fine sea salt.
- Bring to a gentle simmer, then add the soaked mushrooms and the reserved soaking liquid, pouring it in slowly and leaving any grit behind. Simmer gently for 25 minutes until the broth is aromatic and the mushrooms are tender.
- Strain the soup through a sieve into a clean pot, pressing lightly on the mushrooms to extract flavour. Return the mushrooms to the broth and discard the vegetables and spices.
- Cook the egg noodles in a saucepan of the strained soup at a gentle boil for 6 to 8 minutes, or until tender. Stir in the unsalted butter off the heat until melted, then taste and adjust with a little more fine sea salt if needed.
- Ladle into bowls, making sure each serving gets some mushrooms and noodles. Serve hot.
Recipe notes
Tips
- Pour the mushroom soaking liquid in slowly and stop when you reach any sediment, as grit can spoil the broth.
- Keep the simmer gentle so the soup stays clear rather than cloudy.
- If serving to pregnant people, young children, or anyone immunocompromised, make sure the soup is piping hot and the noodles are fully cooked.
Substitutions
- Replace Egg noodles with gluten-free pasta for a similar feel, cooking it in the strained soup until tender.
- Replace Unsalted butter with plant-based-butter for a dairy-free finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. For best texture, freeze the strained soup without the egg noodles and cook fresh noodles when reheating; reheat gently on the hob until piping hot.
