Garlic Toum (Middle Eastern Garlic Emulsion)
Why this recipe works
- Classic emulsion method: Garlic and salt are worked into a fine paste before the oil is added, giving the sauce a stable base.
- Thick, fluffy texture: A very slow oil drizzle helps the mixture trap air and emulsify into a spoonable, soft-peaked sauce.
- Bright balance: Lemon juice cuts through the intensity of the garlic and oil while helping the emulsion stay stable.
- Punchy condiment: Its concentrated flavour means a small amount adds sharpness and richness to wraps, grills, vegetables, and mezze.

Ingredient notes
- Choose fresh garlic: Use firm, fresh cloves where possible; sprouting or dried-out garlic can make the sauce taste harsher.
- Use a neutral oil: Sunflower or canola oil keeps the flavour focused on the garlic and helps preserve the pale colour.
- Adjust the lemon carefully: Extra lemon juice can sharpen the sauce, but add it gradually so the flavour stays balanced.
Common mistakes
- Adding oil too quickly: Pouring the oil in too fast can break the emulsion. Keep the stream very thin, especially at the start.
- Letting the mixture warm up: A warm processor bowl can loosen the sauce. Use ice-cold water and pause briefly if the mixture starts to heat.
- Fixing a loose toum: If it turns greasy or thin, stop adding oil and blend in a little cold water or lemon juice before continuing slowly.
Serving ideas
- With grilled food: Serve in small spoonfuls alongside grilled chicken, lamb, fish, or kebabs.
- With vegetables and bread: Use as a dip for roast potatoes, charred vegetables, warm flatbread, or mezze platters.
- As a finishing accent: Add a small dollop to wraps, grain bowls, or sandwiches where a sharp garlic lift is useful.
Make-ahead tips
- Make ahead: Toum keeps well in a sealed container in the fridge for up to 5 days.
- Keep it chilled: Store cold and avoid leaving it at room temperature for extended periods, especially when serving to vulnerable groups.
- Refresh before serving: If the texture loosens slightly in the fridge, stir, whisk, or briefly blend to bring back its fluffiness.

Ingredients
Instructions
- Juice the lemon and set the juice aside. Add the garlic and fine sea salt to a food processor and blend, stopping to scrape down, until the garlic is very finely minced and looks slightly creamy.
- With the motor running, add 1 tbsp lemon juice, then drizzle in a few tablespoons of sunflower oil very slowly until it starts to thicken. Add 1 tbsp ice-cold water, then continue alternating tiny drizzles of oil with small splashes of lemon juice and water, keeping the stream of oil very thin.
- Once all the oil is incorporated, the toum should be thick, white, and fluffy, holding soft peaks. Taste and add a little more lemon juice if you want it sharper, then blend for 10 seconds to finish.
Recipe notes
Tips
- Keep everything cold: chill the water well and avoid warming the processor bowl, as a cool emulsion is more stable.
- If the toum starts to look greasy or thin, stop adding oil and blend in 1 tbsp lemon juice or 1 tbsp cold water until it comes back together, then continue more slowly.
- For vulnerable groups, use clean equipment and avoid leaving the sauce at room temperature for extended periods.
Substitutions
- Replace sunflower oil with canola oil for a similarly neutral flavour.
- Replace lemon with lime for a slightly different, sharper citrus note.
Storage
- Refrigerate up to 5 days
- Store in a sealed container in the fridge. Stir before serving; if it loosens slightly, briefly whisk or blend to re-fluff.
