Hollandse Linzenstoof (Dutch Lentil Stew) with Smoked Sausage
Why this recipe works
- Savoury depth: Leek, carrot, celeriac, bay and thyme create a rounded base before the smoked sausage adds a deeper, savoury note.
- Bright finish: Mustard and cider vinegar cut through the earthy lentils and smoky sausage, keeping the stew from tasting heavy.
- Simple one-pot method: The vegetables, lentils and sausage cook in the same pot, building flavour while keeping the workflow straightforward.

Texture tips
- For a thicker stew: Simmer uncovered near the end and stir a little more often so some of the lentils break down into the broth.
- For a looser consistency: Add a splash of water or stock as the lentils cook, especially if the stew thickens before they are tender.
Ingredient notes
- Choose the right lentils: Dried green lentils hold their shape well, giving the stew body without turning completely smooth.
- Use ready-to-eat smoked sausage: A cooked smoked pork sausage only needs warming through at the end, which keeps the texture firm and avoids overcooking.
- Balance at the end: Add the mustard and vinegar after simmering so their sharpness stays clear and bright.
Make-ahead tips
- Good for leftovers: The stew holds well in the fridge and the flavours become more settled after resting.
- Reheat gently: Warm in a saucepan with a splash of water, stirring occasionally, until piping hot.
- Freezer-friendly: Cool quickly, freeze in sealed containers, then defrost overnight in the fridge before reheating.
Serving ideas
- Serve with rye bread: Dense rye bread works well alongside the smoky, tangy stew and is useful for scooping up the thick broth.
- Add mustard at the table: Offer extra mustard for anyone who wants a sharper, more robust finish.

Ingredients
Instructions
- Heat the rapeseed oil in a large pot over medium heat. Trim and wash the leek well, then slice it; peel and dice the carrots and celeriac.
- Add the leek, carrots and celeriac to the pot with the fine sea salt and black pepper. Cook for 6 to 8 minutes, stirring, until the leek softens and the vegetables start to turn glossy.
- Crush the garlic and stir it in for 30 seconds until fragrant. Tip in the dried green lentils, then pour in the vegetable stock and add the bay leaves and thyme.
- Bring to a gentle simmer, then reduce the heat to low and cook for 22 to 28 minutes, stirring occasionally, until the lentils are tender and the stew is thick. If it looks too dry before the lentils are cooked, add a splash of water.
- Slice the smoked pork sausage and stir it into the stew. Simmer for 5 minutes until the sausage is warmed through and the stew is piping hot.
- Remove the bay leaves and thyme stems. Stir in the dijon mustard and apple cider vinegar, then taste and adjust seasoning with a little more salt and pepper if needed.
- Serve the stew hot in bowls. Spoon over any extra mustard at the table if you like.

Serving suggestions
This recipe pairs well with:
Tips
- For a thicker, more spoon-coating stew, simmer uncovered for the last 5 minutes and stir more often so the lentils break down slightly.
- If your smoked pork sausage is raw rather than ready-to-eat, simmer it in the stew for 10 to 12 minutes, or until cooked through, before serving.
Substitutions
- Replace dijon mustard with whole-grain mustard for a coarser texture and a milder heat.
- Replace apple cider vinegar with white-wine-vinegar for a cleaner, sharper finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan with a splash of water until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
