Rum Punch
Why this recipe works
- Bright but balanced: Fresh lime cuts through the sweetness of the fruit juices and syrup, keeping the punch lively rather than heavy.
- Layered finish: Dark rum brings depth, while bitters and nutmeg add aromatic warmth without making the drink feel spiced.
- Fast to mix: Everything is shaken with ice and served straight away, so the drink is properly chilled in minutes.

Ingredient notes
- Use fresh lime: Freshly squeezed lime juice gives a cleaner, sharper acidity than bottled juice and helps balance the sweetness.
- Chill the juices first: Cold pineapple and orange juice help the punch stay bright and refreshing without relying too much on melting ice.
- Adjust at the end: Taste after shaking, then add a little more lime for brightness or simple syrup for a softer, sweeter finish.
Cocktail variations
- Try aged rum: Aged rum gives the punch a smoother, oakier character while keeping the same overall style.
- Change the fruit balance: Lean more heavily on pineapple for a tropical profile, or on orange for a rounder, softer citrus flavour.
- Make it lighter: Use a little less syrup and serve over plenty of fresh ice for a brighter, less sweet drink.
Alcohol-free alternatives
- Make it spirit-free: Omit the rum and increase the fruit juices slightly, keeping the lime, bitters-style aromatics and nutmeg for depth.
- Add sparkle: Top a non-alcoholic version with chilled soda water for lift and a lighter drinking texture.
Timing notes
- Serve immediately: Rum punch tastes best straight after shaking, while the drink is cold and the citrus is at its freshest.
- Prep ahead carefully: If making ahead, mix the juices, rum and syrup, then chill. Add ice, bitters and nutmeg only when serving.

- Strain into a glass filled with fresh ice. Add the aromatic bitters and give it a brief stir to combine. Finish with a light dusting of ground nutmeg over the top.
- Taste and adjust with a little more lime juice for brightness or simple syrup for sweetness, if you like. Serve straight away while ice-cold.
