Pan-Seared Duck Breast with Cherry Sauce
Why this recipe works
- Crisp skin, juicy meat: Starting the duck skin-side down in a cold pan gives the fat time to render before the skin browns.
- Built-in sauce depth: The cherry sauce is made in the same pan, so the red wine, stock, and fruit pick up the savoury browned bits from the duck.
- Balanced richness: Balsamic vinegar and red wine cut through the richness of the duck, while honey rounds out the cherries without making the sauce heavy.

Timing notes
- Rest before slicing: Let the duck rest skin-side up so the juices settle and the crisp skin does not soften against the plate.
- Serve straight away: Duck breast is best sliced just before serving, while the sauce is glossy and the skin still has texture.
Texture tips
- For crisper skin: Keep the skin cuts shallow and pour off rendered fat as it accumulates so the duck sears rather than shallow-fries.
- Protect the centre: Use a thermometer for accuracy; duck breast can move from pink and juicy to firm quite quickly once turned.
Ingredient notes
- Choose skin-on duck: Skin-on breasts are essential here because the rendered fat and crisp skin are central to the dish.
- Balance the sauce: If the cherries are very sweet, a little extra vinegar can sharpen the sauce; if they are tart, the honey helps soften the edge.
Common mistakes
- Starting too hot: A hot pan can brown the skin before enough fat has rendered, leaving the layer beneath chewy rather than crisp.
- Reducing the sauce too far: The cherry sauce should lightly coat the back of a spoon; if it becomes sticky or thick, loosen it gently with a little more stock.

Instructions
- Pat the duck breasts dry, then score the skin in a tight crosshatch, taking care not to cut into the flesh. Season all over with the fine sea salt and black pepper. Leave at room temperature while you prepare the cherries.
- Place the duck breasts skin-side down in a cold frying pan and set over medium heat. Cook for 10 to 12 minutes, pouring off excess fat as it renders, until the skin is deep golden and crisp. Turn and cook for 3 to 5 minutes more, until the thickest part reads 54 to 57°C (130 to 135°F) for pink, juicy duck.
- Transfer the duck to a warm plate, skin-side up, and rest for 8 minutes. Pour off all but about 1 tbsp of the duck fat from the pan. Keep the pan on a low heat.
- Add the unsalted butter to the pan and let it melt, then add the sweet cherries and cook for 2 minutes until glossy. Stir in the honey and balsamic vinegar and cook for 30 seconds. Add the red wine and simmer for 3 minutes, scraping up any browned bits.
- Pour in the chicken stock and add the fresh thyme, then simmer for 4 to 6 minutes until the sauce is lightly syrupy and coats the back of a spoon. Taste and adjust with a pinch more fine sea salt and black pepper if needed. Remove the thyme sprigs.
- Slice the duck breasts across the grain and divide between plates. Spoon the cherry sauce over the duck, making sure each serving gets plenty of cherries. Serve straight away.
Recipe notes
Tips
- Scoring the skin helps the fat render; keep the cuts shallow so the meat stays juicy.
- For the best texture, rest the duck before slicing so the juices redistribute.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the duck to at least 63°C (145°F) and rest for 3 minutes.
Substitutions
- Replace red wine with dry white wine for a lighter, brighter sauce.
- Replace balsamic vinegar with red wine vinegar for a sharper finish.
- Replace honey with maple syrup for a slightly deeper sweetness.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat the sauce gently in a saucepan until piping hot; warm the duck briefly in a 160°C (320°F) oven just until heated through to avoid overcooking.
