Hachee (Dutch Beef and Onion Stew)
Why this recipe works
- Deep onion flavour: Slow-cooked onions break down into the gravy, giving the stew natural sweetness and body.
- Balanced richness: Red wine vinegar cuts through the beef and butter, keeping the sauce savoury rather than heavy.
- Gentle braising: A low simmer gives the beef time to become tender while the sauce thickens gradually.
- Good for planning ahead: The flavours settle well after chilling, making this stew well suited to reheating the next day.

Timing notes
- Mostly hands-off cooking: The active work is mainly slicing onions and browning the beef; the long braise does most of the flavour-building.
- Improves after resting: Like many beef stews, hachee often tastes fuller after a night in the fridge and gentle reheating.
Common mistakes
- Do not boil hard: Keep the stew at a quiet simmer so the beef softens without tightening and the sauce does not reduce too quickly.
- Watch the gravy: If the sauce thickens too much before the beef is tender, loosen it gradually with a little extra stock.
- Remove whole spices: Count and remove the cloves before serving or storing, especially when cooking for children.
Ingredient notes
- Use stewing beef: Cuts suited to slow cooking work best here, as they become tender during the long braise.
- Keep the tang balanced: The vinegar should brighten the gravy without dominating it; adjust seasoning at the end once the sauce has reduced.
- Whole cloves matter: Whole cloves give gentle warmth without turning the stew spicy, but they should be removed before eating.
Serving ideas
- Serve with potatoes: Boiled potatoes or mashed potatoes are the classic partners, soaking up the onion-rich gravy.
- Add a simple vegetable: Green beans, red cabbage, or a lightly dressed salad help balance the richness of the stew.

Ingredients
Instructions
- Peel the onions and slice them into thin half-moons. Pat the beef dry and season with the black pepper and 1 tsp of the fine sea salt.
- Melt the unsalted butter in a Dutch oven over medium heat. Add the onions and cook for 10 to 12 minutes, stirring often, until softened and lightly golden at the edges.
- Increase the heat to medium-high and add the beef. Cook for 6 to 8 minutes, turning, until the meat is browned in places; it does not need to be fully cooked through.
- Sprinkle over the plain flour and stir for 1 minute so it coats the meat and onions. Pour in the red wine vinegar and scrape up any browned bits from the base of the pot.
- Add the beef stock, bay leaves, cloves, and the remaining 0.5 tsp fine sea salt. Bring to a gentle simmer, then reduce the heat to low, cover, and cook for 1 hour 45 minutes, stirring every 20 to 30 minutes, until the beef is very tender and the onions have melted into the sauce.
- Taste and adjust seasoning with a little more fine sea salt if needed. Serve hot, spooning plenty of the onion-rich gravy over each portion.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the stew at a very gentle simmer; if it boils hard, the beef can tighten and the sauce may reduce too quickly.
- For a smoother sauce, press the onions against the side of the pot with a wooden spoon during the last 20 minutes of cooking.
- If serving to young children, count the whole cloves in and remove them before serving.
Substitutions
- Replace unsalted butter with olive oil for a slightly lighter finish.
- Replace red wine vinegar with apple cider vinegar for a rounder, fruitier tang.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat, adding a splash of beef stock if the sauce has thickened; freeze for up to 3 months and defrost overnight in the fridge before reheating until piping hot.
