Quinoa and Roast Vegetable Salad

Quinoa and roasted vegetable salad is a light but satisfying grain-based lunch, usually served at room temperature so the grains stay fluffy and the vegetables keep their sweetness. Here, courgette, red pepper and red onion are roasted until tender with browned edges, then folded through quinoa with a sharp lemon, garlic and extra virgin olive oil dressing. Fresh parsley keeps the finish clean and herby. It is the kind of practical salad that works well for packed lunches, make-ahead meals or a simple side, with enough texture and acidity to feel fresh rather than heavy.

Why this recipe works

  • Good texture balance: Tender roasted vegetables give sweetness and softness, while properly rested quinoa stays light rather than clumpy.
  • Bright dressing: Lemon juice cuts through the olive oil and roasted vegetables, keeping the salad fresh and lively.
  • Useful for lunch prep: The salad holds well in the fridge and can be refreshed with extra lemon and olive oil before serving.

Texture tips

  • For fluffier quinoa: Keep the simmer gentle, leave the lid on while it cooks, then let it rest covered before fluffing with a fork.
  • Avoid a wet salad: Let the quinoa cool slightly before mixing so the dressing coats the grains without turning heavy.

Make-ahead tips

  • Prepare ahead: Cook the quinoa and roast the vegetables in advance, then combine with the dressing closer to serving for the freshest texture.
  • After chilling: Bring the salad back towards room temperature before eating, then refresh with lemon juice and olive oil if needed.

Ingredient notes

  • Choose firm courgettes: Firm courgettes roast more cleanly and are less likely to release excess moisture on the tray.
  • Adjust the lemon: Use extra lemon juice if you prefer a sharper salad, especially after refrigeration when flavours can soften.
  • Use fresh herbs: Fresh parsley gives the cleanest finish here; dried herbs will not provide the same lift.

Serving ideas

  • Serve with simple mains: Pair with grilled vegetables, falafel, roast chicken or baked fish for a more substantial meal.
  • Add extra texture: Finish with toasted seeds or crumbled feta if you want more crunch or richness.

  1. Heat the oven to 220°C (430°F). Rinse the quinoa in a sieve under cold water until the water runs clearer.
  2. Cut the courgette and red pepper into bite-size chunks, and cut the red onion into wedges. Tip onto a baking tray, drizzle with 2 tbsp of the olive oil, then season with half the fine sea salt and half the black pepper.
  3. Roast for 20 to 25 minutes, turning once, until tender and nicely browned at the edges. If the tray looks dry, add a small splash of water to help the onions soften without burning.
  4. Meanwhile, put the rinsed quinoa in a saucepan with the water and the remaining fine sea salt. Bring to the boil, then cover and simmer on low for 12 minutes until the water is absorbed and the quinoa is tender.
  5. Take the pan off the heat and leave, covered, for 5 minutes, then fluff with a fork. Tip into a mixing bowl to cool slightly.
  6. Finely grate or crush the garlic into a small bowl, then whisk in the lemon juice, remaining 2 tbsp olive oil, and the remaining black pepper. Taste and adjust with a little more lemon juice if you want it sharper.
  7. Add the roasted vegetables to the quinoa and pour over the dressing. Finely chop the fresh parsley, stir through, and serve at room temperature.

Recipe notes

Tips

  • For fluffier quinoa, keep the simmer very gentle and do not lift the lid while it cooks; the 5-minute rest helps the grains separate.
  • If serving later, dress the salad just before eating for the freshest flavour and texture.
  • If you are sensitive to raw garlic, let the garlic sit in the lemon juice for 5 minutes before whisking in the olive oil to mellow it.

Substitutions

  • Replace fresh parsley with fresh mint for a brighter, more summery finish.
  • Replace lemon with lime for a slightly sharper, more aromatic dressing.
  • Replace extra virgin olive oil with avocado oil for a milder dressing.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Serve at room temperature, or refresh with a squeeze of lemon and a drizzle of extra virgin olive oil after chilling.
