Chicken Fried Chicken with White Gravy
Why this recipe works
- Crisp, craggy coating: A double dip in buttermilk and seasoned flour creates a thicker crust that clings well and fries to a deep golden finish.
- Smooth white gravy: Using the seasoned pan drippings and whisking in the milk gradually gives the gravy body, flavour, and a creamy consistency.
- Classic comfort food balance: Peppery gravy softens the richness of the fried crust while keeping the dish savoury, hearty, and satisfying.

Adjust the heat
- For less heat: Reduce the cayenne and lean more heavily on black pepper for warmth without noticeable chilli heat.
- For more kick: Increase the cayenne in the flour coating slightly, keeping the gravy pepper-led so it does not overpower the crust.
Texture tips
- Help the crust cling: Press the seasoned flour firmly onto the chicken and let the coated pieces rest briefly before frying so the flour hydrates.
- Cook evenly: Pounding the chicken to an even thickness helps the centre cook through before the coating gets too dark.
Common mistakes
- Watch the oil temperature: If the oil is too hot, the coating darkens before the chicken is cooked; if it is too cool, the crust absorbs oil and turns heavy.
- Add milk gradually: Whisk the milk into the flour and drippings slowly to keep the white gravy smooth rather than lumpy.
- Do not overbrown the roux: Cook the flour in the pan drippings until it smells toasty, but stop before it turns dark so the gravy stays pale and creamy.
Make-ahead tips
- Store chicken and gravy apart: Keeping the fried chicken and gravy in separate containers helps preserve the crust as much as possible.
- Reheat for best texture: Warm the chicken on a baking tray in a 200°C (390°F) oven until piping hot, and reheat the gravy gently in a saucepan, whisking until smooth.

Ingredients
Instructions
- Place each chicken breast between two sheets of baking paper and gently pound to an even thickness of about 1.5 cm. Pour the buttermilk into a shallow bowl and add 1 tsp of the fine sea salt, 0.5 tsp of the black pepper, and 0.5 tsp of the cayenne pepper; stir to combine. Add the chicken, turn to coat, and leave to soak while you prepare the flour.
- In a second shallow bowl, mix the plain flour, baking powder, ground garlic, the remaining fine sea salt, the remaining cayenne pepper, and 1 tsp of the black pepper. Lift a piece of chicken from the buttermilk, let the excess drip off, then press firmly into the flour mixture on both sides. Return it briefly to the buttermilk, then coat again in the flour for a thicker crust; repeat with the remaining chicken.
- Heat the vegetable oil in a large frying pan over medium-high heat until shimmering. Fry the chicken in batches for 4 to 6 minutes per side, adjusting the heat so the coating turns deep golden and the chicken is cooked through. Transfer to a plate and keep warm while you make the gravy.
- Carefully pour off all but about 3 tbsp of the oil from the pan, keeping the browned bits. Whisk in 3 tbsp of the seasoned flour mixture and cook for 1 minute, whisking constantly, until it smells toasty but not dark. Slowly whisk in the whole milk and simmer gently for 3 to 5 minutes until thickened enough to coat the back of a spoon.
- Season the gravy with the remaining black pepper, tasting as you go. Serve the chicken hot with the peppery white gravy spooned over the top. If the gravy thickens too much, whisk in a splash more whole milk over low heat.
Recipe notes
Tips
- For the best crust, press the flour coating firmly onto the chicken and let the breaded pieces sit for 5 minutes before frying so the coating hydrates and clings.
- Keep the oil at a steady medium-high heat: if it smokes, lower the heat; if the coating pales and absorbs oil, raise it slightly.
- Food safety: chicken must be cooked until piping hot throughout, with no pink in the centre; take extra care for young children, older adults, and anyone who is pregnant or immunocompromised.
Substitutions
- Replace Buttermilk with Whole milk mixed with 1 tbsp of white wine vinegar, then leave for 5 minutes before using.
- Replace Cayenne pepper with a smaller amount of Black pepper for a milder heat.
Storage
- Refrigerate up to 2 days
- Cool the chicken and gravy separately, then refrigerate in sealed containers. Reheat the chicken on a baking tray in a 200°C (390°F) oven until piping hot; reheat the gravy gently in a saucepan, whisking, and loosen with a splash of whole milk if needed.
