Air Fryer Crispy Chicken Sandwich
Why this recipe works
- Crisp coating: Pressing the breadcrumbs firmly onto the chicken helps create an even crust that crisps well in the air fryer.
- Weeknight-friendly timing: The air fryer cooks the breaded chicken in a short window while the lettuce, tomato and buns can be prepared alongside.
- Fresh balance: Romaine and tomato cut through the richness of the mayonnaise, brioche and breaded chicken.

Texture tips
- For a crisper finish: Let the coated chicken sit briefly before cooking so the breadcrumbs hydrate and cling more securely.
- Keep the chicken juicy: Cook only until the thickest part is done; overcooking chicken breast quickly makes it dry.
Common mistakes
- Avoid crowding the air fryer: Leave space around the chicken so hot air can circulate and crisp the coating evenly.
- Do not assemble too early: Add the hot chicken to the bun just before serving to keep the crumb coating crisp.
Ingredient notes
- Choose the right tomato: Use a ripe but firm tomato so it adds freshness without making the bun watery.
- Paprika options: Sweet paprika keeps the flavour rounded and mild; smoked paprika gives the coating a deeper, smokier note.
Make-ahead tips
- Store parts separately: Keep cooked chicken away from the bun, lettuce, tomato and mayonnaise so the sandwich does not turn soft.
- Reheat for crispness: Reheat the chicken in the air fryer at 180°C (355°F) until piping hot and crisp, then assemble.

Ingredients
Instructions
- Pat the chicken dry. Put the flour in a bowl and mix in the paprika, salt and pepper. In a second bowl, beat the egg; put the breadcrumbs in a third bowl.
- Coat each chicken breast in the seasoned flour, then dip in the egg, then press firmly into the breadcrumbs until well covered. Set aside for 5 minutes so the coating hydrates and sticks.
- Preheat the air fryer to 200°C (390°F). Air fry the chicken for 14 to 18 minutes, turning once, until deep golden and the chicken is cooked through (no pink in the thickest part).
- While the chicken cooks, shred the romaine lettuce and slice the tomato. Split the brioche buns and warm them in the air fryer for 1 to 2 minutes if you like.
- Spread mayonnaise on the bun bases. Add the lettuce and tomato, top with the hot crispy chicken, then cap with the bun tops and serve straight away.
Recipe notes
Tips
- Press the breadcrumbs on firmly so the coating stays even and cooks up crisp.
- For the juiciest result, avoid overcooking; the chicken is ready when it feels firm and the juices run clear when pierced in the thickest part.
Substitutions
- Replace sweet paprika with smoked paprika for a smokier flavour.
- Replace mayonnaise with aioli for a more garlicky finish.
Storage
- Refrigerate up to 2 days
- Store the cooked chicken separate from the brioche bun, romaine lettuce, tomato and mayonnaise. Reheat the chicken in the air fryer at 180°C (355°F) for 4 to 6 minutes until piping hot and crisp, then assemble.
