Air Fryer Chicken Pesto Bake
Why this recipe works
- Fast weeknight method: The air fryer cooks the chicken, tomatoes and cheese in one compact dish with very little hands-on time.
- Built-in sauce: Pesto mixes with the tomato juices as it cooks, creating a herby, savoury sauce to spoon over the chicken.
- Bright finish: Lemon zest and juice cut through the richness of the mozzarella and pesto, keeping the dish fresh rather than heavy.

Timing notes
- Quick prep, active finish: Most of the work is done in the first few minutes; stay nearby once the mozzarella is added, as it can brown quickly.
- Rest before serving: Let the chicken stand briefly after cooking so the juices settle before slicing or serving.
Texture tips
- Even thickness helps: Flatten very thick chicken breasts slightly so they cook through evenly without drying at the edges.
- Check the thickest part: Cook until there is no pink in the thickest part of the chicken, then stop rather than extending the time unnecessarily.
Ingredient notes
- Use a punchy pesto: Because pesto is the main seasoning, choose one with a bright basil flavour and enough salt to carry the chicken.
- Ripe tomatoes matter: Sweet, ripe cherry tomatoes soften into the pesto and give the dish a better sauce-like finish.
Make-ahead tips
- Best served hot: The mozzarella has the best texture straight from the air fryer, while the pesto-tomato juices are still warm.
- Reheat gently: Reheat leftovers in the air fryer at 170°C (340°F) until piping hot, then finish with fresh lemon to lift the flavours.

Ingredients
Instructions
- Heat the air fryer to 190°C (375°F) for 3 minutes. Lightly oil a small baking dish that fits your air fryer basket.
- Put the chicken breasts in the dish and rub with the extra virgin olive oil. Nestle the cherry tomatoes around the chicken.
- Spoon the basil pesto over the chicken, spreading it to cover the top. Air-fry for 12 minutes, then carefully turn the tomatoes so they cook evenly.
- Tear or slice the mozzarella and place it on top of the chicken. Air-fry for 6 to 8 minutes until the mozzarella is browned in spots, the tomatoes are soft, and the chicken is cooked through with no pink in the thickest part.
- Finely grate a little lemon zest over the top, then squeeze over lemon juice to taste. Finish with black pepper and spoon the pesto-tomato juices over the chicken to serve.
- Rest for 2 to 3 minutes before serving so the juices settle. Serve straight from the dish while hot.

Tips
- If your chicken breasts are very thick, flatten them slightly so they cook evenly and stay juicy.
- Keep an eye on the mozzarella in the final minutes, as it can brown quickly depending on your air fryer model.
Substitutions
- Replace Mozzarella with Cheddar cheese for a more robust, sharper topping.
- Replace Basil pesto with Sun-dried-in-oil tomato for a sweeter, more tomato-forward finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Reheat in the air fryer at 170°C (340°F) for 6 to 8 minutes until piping hot, adding a fresh squeeze of lemon at the end.
