Ratatouille au Four (Oven-Baked Vegetables)

The familiar French vegetable dish takes especially well to oven baking, where aubergine, courgette, tomato, pepper and onion soften slowly in olive oil rather than being hurried on the hob. Layering the sliced vegetables helps them cook evenly, while thyme, bay leaf and garlic give the roasting juices a savoury, herb-scented depth. The finished ratatouille au four should be tender and almost melting, with lightly caramelised edges and plenty of glossy pan juices. Serve it warm as a vegetable side, spoon it over grains or bread, or let it come to room temperature for a relaxed lunch.

Why this recipe works

  • Layered savoury flavour: Roasting the onion, pepper and garlic first builds a sweet, aromatic base before the softer vegetables are added.
  • Melting vegetable texture: Covering the dish for most of the bake lets the aubergine and courgette soften gently, then uncovering finishes the top with light caramelisation.
  • Good served warm or later: The olive oil, herbs and vegetable juices settle as the dish rests, making it well suited to serving at room temperature or reheating.

Timing notes

  • Mostly hands-off cooking: The active work is mainly slicing and layering; the oven does most of the cooking once the vegetables are assembled.
  • Flexible serving temperature: Serve warm after a short rest, or let it cool to room temperature for a more relaxed lunch or side dish.

Texture tips

  • Slice evenly: Keep the aubergine and courgette rounds a similar thickness so they soften at the same rate.
  • Uncover at the end: Removing the lid or foil for the final roast helps excess moisture reduce and gives the top a light caramelised finish.

Ingredient notes

  • Use ripe tomatoes: Ripe cherry tomatoes bring sweetness and acidity, which balance the richness of the olive oil and the softness of the aubergine.
  • Fresh herbs suit the gentle roast: Fresh thyme and bay leaf infuse the oil and vegetables without overpowering them; remove the stems and bay leaf before serving.

Make-ahead tips

  • Make ahead: Cook the dish in advance, cool it completely and refrigerate in a sealed container until needed.
  • Reheat gently: Reheat in a 180°C (355°F) oven until piping hot, or serve at room temperature if preferred.
  • Freezer-friendly: Freeze after cooking and cooling, then thaw overnight in the fridge before reheating.

  1. Heat the oven to 190°C (375°F). Cut the onion and red pepper into thin strips, and slice the aubergine and courgettes into 1 cm rounds. Halve any larger tomatoes so they roast evenly.
  2. Pour about a third of the olive oil into a baking dish and spread it over the base. Add the onion, red pepper and garlic, then season with a pinch of the fine sea salt and a little black pepper. Roast for 15 minutes until the onion starts to soften.
  3. Stir the softened onion and pepper mixture, then arrange the aubergine, courgette and tomatoes in overlapping layers across the dish. Tuck in the thyme sprigs and bay leaf. Drizzle over the remaining olive oil and season with the remaining fine sea salt and black pepper.
  4. Cover the dish tightly with a lid or foil and bake for 35 minutes, until the vegetables are collapsing and very tender. Uncover and roast for a further 10 minutes to lightly caramelise the top. Remove the bay leaf and thyme stems before serving.
  5. Rest for 3 minutes so the juices settle, then spoon into bowls or onto plates. Serve warm or at room temperature, with plenty of the olive oil and roasting juices.

Recipe notes

Tips

  • Slice the vegetables to a similar thickness so they cook at the same rate and turn meltingly tender together.
  • If the top is browning too quickly after uncovering, lower the oven to 180°C (355°F) and continue roasting until the aubergine is fully soft.
  • Food safety: this dish is suitable for vulnerable groups when served hot and kept refrigerated promptly after cooling.

Substitutions

  • Replace Fresh thyme with Fresh rosemary for a more robust, piney flavour.
  • Replace Red pepper with Yellow pepper for a slightly sweeter finish.

Storage

  • Refrigerate up to 4 days
  • Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 15–20 minutes until piping hot, or serve at room temperature; freeze for up to 2 months and thaw overnight in the fridge before reheating.
