Pasta Bowl Mediterranea with Tomatoes, Olives and Mozzarella
Why this recipe works
- Fast but complete: The sauce comes together while the spaghetti cooks, keeping the whole dish comfortably under 30 minutes.
- Simple, layered flavour: Low-heat garlic oil, briny olives, sweet tomatoes and basil give the pasta depth without needing a long-cooked sauce.
- Creamy contrast: Torn mozzarella softens gently against the warm pasta, adding richness while keeping the bowl fresh.
- Flexible serving: It works warm or at room temperature, making it useful for lunch, packed meals or relaxed casual serving.

Ingredient notes
- Choose firm, ripe tomatoes: Cherry tomatoes should be sweet and juicy but still firm enough to hold their shape when tossed with warm pasta.
- Use a good olive oil: Because the dressing is so simple, extra virgin olive oil has a direct impact on the final flavour.
- Tear the mozzarella: Tearing creates uneven edges that catch the garlic oil and settle naturally through the pasta.
Timing notes
- Serve warm or room temperature: The pasta is best shortly after tossing, but it can sit until just warm without losing its fresh character.
- Brief rest before cheese: Letting the dressed pasta stand briefly softens the tomatoes and prevents the mozzarella from melting too much.
Common mistakes
- Do not brown the garlic: Garlic should only become fragrant in the oil; if it colours, the dressing can taste bitter.
- Avoid a dry finish: Add reserved pasta water gradually until the spaghetti looks lightly glossy rather than oily or clumpy.
- Keep the pasta al dente: Slightly firm spaghetti holds up better when tossed with tomatoes, olives and mozzarella.
Make-ahead tips
- Best texture for prep: For the freshest result, keep basil and mozzarella separate until shortly before serving.
- Refresh gently: If reheating, warm gently with a splash of water so the pasta loosens without making the mozzarella rubbery.
- Best on the day: The flavours hold well for lunch, but the basil and tomatoes are at their brightest on the day it is made.

Instructions
- Bring a large pot of water to the boil and season it with 1.5 tsp of the fine sea salt. Cook the spaghetti until al dente, following the packet timing. Reserve 120 ml of the pasta water, then drain.
- While the pasta cooks, halve the cherry tomatoes and tear the mozzarella into bite-sized pieces. Roughly tear the fresh basil leaves. Lightly crush or finely chop the garlic.
- Warm the extra virgin olive oil in a small saucepan over low heat, then add the garlic and cook for 30 to 60 seconds until fragrant, not coloured. Take off the heat and stir in the remaining 0.5 tsp fine sea salt and the black pepper. Add a splash of the reserved pasta water to loosen it into a glossy dressing.
- Tip the hot spaghetti into a mixing bowl and toss with the garlic oil dressing. Add the cherry tomatoes and black pitted olives, then toss again, adding more reserved pasta water a little at a time until the pasta looks lightly coated. Let it sit for 2 minutes so the tomatoes start to soften slightly.
- Fold in the mozzarella and most of the fresh basil. Taste and adjust with a little more black pepper if you like. Serve warm or at room temperature, scattered with the remaining basil.
Recipe notes
Tips
- Keep the garlic on a low heat and remove it as soon as it smells fragrant; if it browns, the dressing will taste bitter.
- For a warm-but-not-melty finish, let the pasta cool for 2 to 3 minutes before folding in the mozzarella.
- If serving at room temperature, toss with a little extra reserved pasta water just before serving to refresh the sheen.
Substitutions
- Replace Spaghetti with Linguine for a similar texture and shape.
- Replace Mozzarella with Fresh mozzarella for a softer, creamier finish.
- Replace Black pitted olives with Green pitted olives for a brighter, sharper flavour.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container. Bring to room temperature for 20 minutes before serving, or warm gently in a saucepan with a splash of water until just heated through.
