Flødekartofler (Danish Creamed Potatoes)
Why this recipe works
- Creamy, tender layers: Thin potato slices cook slowly in milk and cream, absorbing flavour while becoming soft without losing their layered structure.
- Gentle aromatic depth: Garlic, thyme, white pepper and nutmeg season the cream before baking, giving the potatoes warmth without overwhelming the dish.
- Classic side-dish comfort: Butter and cream create a rich sauce and lightly golden top, making this a satisfying accompaniment to simple mains.

Ingredient notes
- Choose waxy or all-purpose potatoes: Yukon Gold potatoes work well because they become tender and creamy while still holding their shape in layers.
- Cream controls richness: Double cream gives the fullest sauce. Cooking cream can be used for a lighter version, though the finished dish will be less rich.
- Slice evenly: Keep the potato slices thin and consistent so the layers cook through at the same rate.
Texture tips
- Warm the dairy first: Gently warming the milk and cream helps the aromatics infuse and allows the sauce to settle more evenly between the potato layers.
- Avoid boiling the cream: Keep the dairy mixture below a simmer before baking; boiling can make the sauce more likely to split.
- Check the centre: If the top is golden but the middle is not fully tender, cover the dish loosely and continue baking until the potatoes pierce easily.
Make-ahead tips
- Bake ahead if needed: The finished dish can be cooled, covered and refrigerated, then reheated until piping hot before serving.
- Reheat gently: Reheat in a 180°C (355°F) oven. If the potatoes look dry, add a small splash of milk before warming through.
- Best freshly baked: The texture is creamiest shortly after baking, once the dish has rested briefly and the sauce has settled.
Authenticity notes
- Danish home-style side: Flødekartofler is typically a mild, creamy baked potato dish rather than a heavily seasoned casserole.
- Herb variations: Thyme gives a fresh, savoury note, while rosemary can be used for a more resinous, wintry flavour.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Rub a baking dish with a little of the salted butter, then set it aside.
- In a saucepan over low heat, warm the whole milk and double cream with the garlic, fine sea salt, white pepper, ground nutmeg and the thyme sprigs. Heat until steaming but not boiling, then take off the heat and leave to infuse for 5 minutes.
- Peel the potatoes and slice them very thinly, about 2 to 3 mm, using a mandoline or a sharp knife. Layer the slices in the buttered dish, keeping them as even as you can.
- Fish out the thyme sprigs from the warm cream mixture, then pour the cream over the potatoes. Dot the top with the remaining salted butter.
- Bake for 55 to 60 minutes, until the potatoes are tender when pierced and the top is lightly golden. If the top colours too quickly, loosely cover the dish and continue baking until fully tender.
- Rest for 5 minutes so the cream settles slightly, then serve hot. Spoon up some of the creamy sauce with each portion.
Recipe notes
Tips
- Slice the potatoes evenly so they cook at the same rate; a mandoline makes this much easier.
- Keep the cream mixture just below a simmer so it does not split before baking.
- If you are serving vulnerable people, make sure the dish is baked until the potatoes are fully tender and the centre is piping hot.
Substitutions
- Replace Fresh thyme with Fresh rosemary for a more resinous, wintry flavour.
- Replace White pepper with Black pepper for a slightly sharper finish.
- Replace Double cream with Cooking cream for a lighter result, though the sauce will be less rich.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven until piping hot; add a small splash of whole milk if it looks dry.
