Aquavit-Style Spiced Spirit (Caraway, Dill and Lemon)
Why this recipe works
- Layered spice: Caraway provides the signature savoury note, while dill seed, fennel and lemon add freshness and aromatic lift.
- Low active time: Most of the work is passive steeping, with only a few minutes of hands-on preparation and straining.
- Easy to adjust: The steeping time can be shortened for a cleaner finish or extended slightly for a stronger spice profile.

Timing notes
- Mostly passive time: The active preparation is brief; the main flavour development happens during the room-temperature steep.
- Taste before extending: Taste after 2 hours and continue steeping only if you want a more pronounced caraway and dill character.
- Serve very cold: Chill thoroughly before serving so the spirit tastes clean, brisk and aromatic rather than warm or harsh.
Ingredient notes
- Caraway leads the flavour: Caraway is the defining spice here, so use fresh, aromatic seeds rather than old spices that smell dusty or flat.
- Use unwaxed citrus if possible: Because the peel is infused directly into the spirit, an unwaxed lemon gives the cleanest citrus aroma.
- Avoid the white pith: Peel a wide strip as thinly as possible; too much white pith can bring bitterness to the infusion.
Common mistakes
- Heating too strongly: Keep the vodka below a simmer. Bubbling or boiling can dull the aroma and create a harsh-tasting infusion.
- Steeping for too long: Leaving the spices in far beyond the suggested window can make the drink taste heavy, bitter or overly medicinal.
- Cloudy finish: Press the spices only lightly when straining, and let the liquid settle before a second strain if you want extra clarity.
Make-ahead tips
- Good for advance preparation: The strained spirit can be made ahead and kept sealed in the fridge, where the aroma stays freshest.
- Chill before pouring: Refrigerate or freeze the bottle before serving; it will stay pourable and is best in small, icy-cold measures.
- Flavour after resting: A short rest after straining can help the spice and citrus notes settle into a smoother, more integrated drink.

Ingredients
Instructions
- Using a vegetable peeler, remove a wide strip of peel from the lemon, avoiding as much white pith as you can. Put the vodka, caraway seeds, dill seed, fennel seeds and the lemon peel into a small saucepan.
- Warm very gently over the lowest heat for 3 to 5 minutes, just until the vodka is hot to the touch but not simmering. Take off the heat and leave to cool to room temperature.
- Pour into a clean jar or bowl, cover, and steep for 2 hours at room temperature for a clean, aromatic infusion. Taste after 2 hours; if you want it stronger, steep for up to 4 hours total.
- Strain through a fine sieve into a clean bottle or jar, pressing lightly on the spices to extract flavour without forcing sediment through. Chill until very cold before serving in small measures.
Recipe notes
Tips
- Keep the heat very low when warming the vodka; you want it hot enough to encourage infusion, not bubbling or boiling.
- For an extra-clean finish, strain a second time through a very fine sieve after 5 minutes of settling.
- Alcohol is not suitable for children, and for adults who are pregnant or avoiding alcohol.
Substitutions
- Replace Lemon with Lime for a sharper citrus note.
Storage
- Refrigerate up to 30 days
- Store sealed in the fridge for up to 1 month for the freshest aroma. It can also be kept in the freezer; it will not freeze solid and is ideal served well chilled.
