Moussaka (Layered Aubergine and Minced Lamb Casserole)

Moussaka brings together some of the most recognisable elements of Greek comfort cooking: tender aubergine, a savoury minced lamb and tomato filling, and a thick, creamy béchamel baked to a golden top. The lamb sauce is gently spiced with cinnamon and oregano, giving the casserole warmth without overwhelming the vegetables. Roasting the aubergine keeps the layers soft but not greasy, while a proper rest after baking helps the dish set into clean, generous slices. Rich enough for a weekend dinner yet practical to make ahead, it is best served warm rather than straight from the oven, when the flavours have settled and the structure holds.

Why this recipe works

  • Layered savoury depth: Roasted aubergine, lamb, tomato, cinnamon and oregano build the rich, aromatic character associated with moussaka.
  • Creamy baked topping: A thick béchamel forms a smooth, golden layer that balances the robust lamb and tomato filling.
  • Sets well as it rests: Resting after baking allows the layers to firm up, making the casserole easier to slice and serve neatly.

Timing notes

  • Rest before slicing: Leave the moussaka to stand after baking so the béchamel and filling settle into defined layers.
  • Work in stages: Roast the aubergine while the lamb sauce simmers to keep the overall cooking time efficient.

Make-ahead tips

  • Make ahead: The full casserole can be baked ahead, cooled, covered and refrigerated, then reheated until piping hot.
  • Freeze in portions: Cool completely before freezing well-wrapped portions; thaw overnight in the fridge before reheating.
  • Reheat gently: Warm portions in a 180°C (355°F) oven until piping hot; the béchamel may loosen slightly, then settle as it stands.

Common mistakes

  • Thin meat sauce: Simmer the lamb and tomato mixture until thick and spoonable so it does not make the layers watery.
  • Steamed aubergine: Pat the salted aubergine dry and roast it in a single layer so it softens and browns rather than steaming.
  • Cutting too soon: Slicing straight from the oven will give softer, looser portions; allow the resting time for cleaner servings.

Authenticity notes

  • Greek home-style structure: This version follows the familiar Greek layering of aubergine, minced meat in tomato sauce, and a baked béchamel topping.
  • Meat variation: Lamb gives a richer flavour, while minced beef is a common alternative with a milder profile.

  1. Heat the oven to 220°C (430°F). Slice the aubergines into 1 cm rounds, lay on trays, and sprinkle with 1 tsp of the fine sea salt; leave for 15 minutes, then pat dry.
  2. Brush the aubergine slices lightly with some of the extra virgin olive oil and arrange in a single layer. Bake for 20 to 25 minutes, turning once, until softened and lightly golden.
  3. Meanwhile, warm 1 tbsp of the extra virgin olive oil in a large frying pan over medium heat. Finely chop the yellow onion, cook for 8 to 10 minutes until soft, then crush in the garlic and cook for 1 minute.
  4. Add the minced lamb and cook for 8 to 10 minutes, breaking it up, until browned and any liquid has evaporated. Stir in the ground cinnamon, dried oregano, black pepper, and the remaining 1 tsp fine sea salt.
  5. Pour in the tomato passata, bring to a gentle simmer, then cook for 15 to 20 minutes until thick and spoonable. Taste and adjust with a little more black pepper if you like.
  6. Reduce the oven to 190°C (375°F). Melt the unsalted butter in a saucepan over medium heat, stir in the plain flour, and cook for 1 minute until it smells biscuity but has not coloured.
  7. Gradually whisk in the whole milk until smooth. Cook, whisking often, for 6 to 8 minutes until thick enough to coat the back of a spoon, then take off the heat.
  8. Lightly oil a baking dish with a little of the remaining extra virgin olive oil. Layer half the aubergine, then all the lamb and tomato sauce, then the remaining aubergine; spoon the béchamel over the top and smooth it out.
  9. Bake for 35 to 40 minutes until the top is golden and the edges are bubbling. Rest for 20 minutes before slicing so the layers set.

Recipe notes

Tips

  • Salting the aubergine helps it soften and reduces bitterness; pat it dry well so it roasts rather than steams.
  • For clean slices, let the moussaka rest the full 20 minutes, then cut with a sharp knife and lift with a spatula.
  • If serving vulnerable groups, ensure the casserole is baked until piping hot throughout before resting and serving.

Substitutions

  • Replace Minced lamb with minced beef for a milder, less rich filling.
  • Replace Dried oregano with fresh oregano for a brighter herbal note.
  • Replace Extra virgin olive oil with light olive oil if you prefer a more neutral flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then cover and refrigerate. Reheat portions in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; the béchamel may loosen slightly but will settle as it stands. Freeze well-wrapped portions for up to 2 months and thaw overnight in the fridge before reheating.
