Dal Makhani (Creamy Black Lentil Curry)

Slow-simmered and deeply savoury, dal makhani is a North Indian black lentil curry prized for its velvety texture and gentle spice. Whole black gram lentils give the dish its earthy depth, while red lentils help thicken the sauce as they break down. A tomato masala with onion, ginger, garlic, cumin, turmeric and garam masala is cooked until mellow, then folded into the lentils for a long, gentle simmer. Butter, double cream and crushed kasuri methi finish the dal with richness, silkiness and a subtle fenugreek aroma, making it well suited to rice, flatbreads or a larger vegetarian spread.

Why this recipe works

  • Creamy, slow-simmered texture: Long, gentle cooking softens the black gram lentils while the red lentils break down into the sauce.
  • Deep masala base: Cooking the onion, ginger, garlic, spices and tomatoes separately builds a fuller flavour before they are stirred into the lentils.
  • Classic finishing touch: Kasuri methi, butter and cream are added near the end to preserve their aroma and give the dal its rounded, restaurant-style richness.

Timing notes

  • Mostly hands-off cooking: The active work is mainly chopping and making the masala; most of the time is the lentils gently simmering until tender.
  • Serve after the final simmer: Let the dal settle briefly off the heat before serving so the cream, butter and lentils come together into a thicker texture.

Authenticity notes

  • Use whole black gram lentils: Whole black gram lentils are central to dal makhani; they hold their shape while gradually becoming creamy.
  • Slow simmering matters: Dal makhani is known for its long, gentle cooking, which develops body and depth rather than relying only on cream.
  • Serve with rice or flatbread: Basmati rice, naan, roti or paratha are all natural pairings for the rich lentil sauce.

Texture tips

  • For a creamier dal: Mash a small portion of the cooked lentils against the side of the pot, then stir them back through the sauce.
  • Add cream gently: Keep the heat low once the cream goes in and avoid boiling, which can make the finish look less smooth.

Make-ahead tips

  • Improves after resting: The flavours deepen after a night in the fridge, making this a strong make-ahead curry.
  • Reheat gently: Warm in a saucepan with a splash of water, stirring often, until piping hot throughout.
  • Freeze in portions: Cool completely before freezing, then defrost overnight in the fridge and reheat gently.

  1. Rinse the black gram lentils and red lentils in a colander until the water runs mostly clear. Put them in a large pot with the water and bring to the boil, skimming any foam. Reduce to a gentle simmer and cook for 60 minutes, stirring now and then, until the black lentils are tender.
  2. Meanwhile, finely chop the onion. Crush the garlic and finely grate the ginger. Keep them ready by the hob.
  3. In a saucepan over medium heat, melt the butter. Add the onion with a pinch of the salt and cook for 8 to 10 minutes until soft and lightly golden. Stir in the garlic and ginger and cook for 1 minute until fragrant.
  4. Stir the ground cumin, ground turmeric and garam masala into the butter mixture for 30 seconds. Add the canned tomatoes and simmer for 10 to 12 minutes, stirring, until the sauce looks thicker and the raw tomato smell has cooked off. Season with the remaining salt.
  5. Scrape the tomato masala into the pot of lentils and stir well. Simmer gently for 45 minutes, stirring frequently and topping up with a splash of water if it starts catching, until the dal is thick and creamy. Lightly mash a few spoonfuls of lentils against the side of the pot to help it turn velvety.
  6. Crush the dried kasuri methi between your palms and stir it into the dal. Turn the heat to low and stir in the double cream, then cook for 2 to 3 minutes without boiling. Taste and adjust seasoning with a little more salt if needed.

Recipe notes

Tips

  • Keep the simmer very gentle and stir often in the final 30 minutes, as the dal thickens and can catch on the base of the pot.
  • For the creamiest texture, cook until the black lentils are fully tender, then mash a small portion into the pot and stir well.
  • If you are pregnant, elderly, or immunocompromised, use pasteurised double cream and ensure the dal is piping hot throughout before serving.

Substitutions

  • Replace Unsalted butter with ghee for a more traditional, nutty richness.
  • Replace Double cream with single cream for a lighter finish, simmering a few minutes longer to thicken.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water, stirring often, until piping hot. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
