Tortitas de Papa (Potato Patties in Tomato and Guajillo Sauce)

Golden potato patties in a tomato–guajillo sauce are a comforting Mexican-style vegetarian dinner with soft, savoury depth rather than heavy heat. The mashed potato is bound with egg, shaped into small tortitas and pan-fried until lightly crisp on the outside, then gently simmered so the centres stay tender while absorbing the smooth chilli-tomato sauce. Guajillo brings a mild, earthy warmth, balanced by ripe tomato, onion, garlic and a squeeze of lime. Finished with fresh coriander, the dish works well as a main with rice, beans or a simple salad, and reheats best over a gentle heat so the patties keep their shape.

Why this recipe works

  • Layered sauce flavour: Softened onion, garlic, ripe tomato and guajillo chilli build a savoury sauce with gentle warmth and depth.
  • Tender patties, golden edges: Pan-frying sets the potato patties before they simmer, helping them hold their shape while staying soft inside.
  • Fresh finish: A squeeze of lime brightens the tomato-based sauce and balances the richness of the fried potato patties.

Texture tips

  • Help the patties hold together: Drain and steam-dry the potatoes well before mashing; excess moisture makes the mixture harder to shape and more likely to break.
  • Keep the sauce gentle: Once the patties are in the pan, use a low, steady simmer rather than a hard boil so they absorb sauce without falling apart.

Adjust the heat

  • For a milder sauce: Use mild chilli powder in place of guajillo chilli powder for warmth with less smoky depth.
  • To keep the heat balanced: Finish with lime to sharpen the sauce if the chilli tastes too earthy or heavy.

Make-ahead tips

  • Shape ahead: The potato patties can be shaped in advance and kept chilled until ready to fry.
  • Reheat gently: Warm leftovers covered in a saucepan with a splash of water, keeping the heat gentle to avoid breaking the patties.
  • Freeze in portions: Cool completely, freeze in portions, then defrost overnight in the fridge before reheating until piping hot.

Serving ideas

  • Serve with rice or beans: Rice, beans or warm tortillas make the saucy patties feel like a complete vegetarian meal.
  • Finish with herbs and citrus: Fresh coriander and lime add brightness against the earthy guajillo and soft potato.

  1. Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water and add 1 tsp of the fine sea salt. Bring to the boil, then cook for 12 to 15 minutes until very tender.
  2. Meanwhile, roughly chop the onion and peel the garlic. Roughly chop the tomatoes and cut the lime into wedges. Pick the coriander leaves and finely chop the stems.
  3. Drain the potatoes well and let them steam-dry in the colander for 2 minutes. Mash until smooth, then mix in the egg, black pepper and the remaining 1 tsp fine sea salt. Shape into 10 to 12 small patties, pressing firmly so they hold together.
  4. Heat 3 tbsp of the vegetable oil in a frying pan over medium heat. Fry the patties in batches for 2 to 3 minutes per side until golden, adding a little more oil if the pan looks dry. Transfer to a plate as you go.
  5. Wipe out the pan if there are any burnt bits, then add the remaining vegetable oil and set over medium heat. Cook the onion for 5 minutes until softened, then add the garlic and cook for 30 seconds until fragrant. Stir in the guajillo chili powder for 20 seconds.
  6. Add the tomatoes and 250 ml water, then bring to a simmer for 5 minutes to soften. Blend until smooth, then return the sauce to the pan and simmer for 3 minutes; if it is very thick, loosen with a splash of water. Taste and adjust with a squeeze of lime if you want it brighter.
  7. Nestle the potato patties into the sauce in a single layer. Simmer gently for 8 to 10 minutes, spooning sauce over the top, until the patties are heated through and the sauce tastes cooked and cohesive. Scatter over the coriander stems and leaves, and serve hot with lime wedges.

Recipe notes

Tips

  • For patties that hold together neatly, make sure the potatoes are well drained and steam-dried before mashing, and let the shaped patties sit for 5 minutes before frying.
  • Keep the sauce at a gentle simmer once the patties go in; a hard boil can break them up.
  • If serving vulnerable groups, ensure the egg in the patties is fully cooked by frying until well browned and simmering until piping hot throughout.

Substitutions

  • Replace Guajillo chili powder with mild chili powder for a similar warmth with less depth.
  • Replace Fresh coriander with Fresh parsley for a different but still fresh herbal finish.
  • Replace Lime with Lemon for a similar citrus lift.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water, covered, for 8 to 10 minutes until piping hot; avoid vigorous boiling. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
