Som Tam Salad Bowl (Thai Green Papaya Salad)
Why this recipe works
- Bright, balanced dressing: Lime and tamarind bring sharpness, fish sauce adds savoury depth, and palm sugar rounds the dressing without making it overly sweet.
- Crunch and freshness: Firm green papaya, tender beans, juicy tomatoes, roasted peanuts and soft herbs create the contrast that makes som tam so refreshing.
- Fast no-cook method: Everything is shredded, sliced and tossed, making the bowl ready in under 30 minutes without using the hob or oven.
- Easy to adjust: The chilli, lime, fish sauce and sugar can be balanced to suit your preferred level of heat, saltiness, sourness and sweetness.

Adjust the heat
- For less heat: Start with less chilli powder, then let people add more at the table so the dressing stays balanced but not overpowering.
- For more heat: Add extra chilli gradually after tossing, tasting as you go so the spice lifts the salad without masking the lime and fish sauce.
- Keep the heat in balance: If the chilli becomes too dominant, add a little more lime or palm sugar to bring the dressing back towards salty, sour and sweet.
Ingredient notes
- Choose firm green papaya: Unripe papaya should feel firm and taste mild; ripe papaya is too soft and sweet, and will make the salad watery once dressed.
- Use a punchy fish sauce: Fish sauce provides much of the savoury backbone, so use one with a clean aroma rather than a harsh or overly salty finish.
- Balance lime and tamarind: Lime gives fresh sharpness, while tamarind adds deeper tang; adjust either gradually if the dressing needs more brightness.
Texture tips
- Dress just before serving: Toss the papaya with the dressing shortly before eating so it softens slightly but keeps its crisp, refreshing bite.
- Keep the toppings textured: Roughly crush the peanuts rather than grinding them finely, so they add noticeable crunch throughout the bowl.
Authenticity notes
- Traditional texture: Classic som tam is often pounded lightly to bruise the papaya and help the dressing penetrate; this version uses vigorous tossing for a simpler bowl-style method.
- Bowl-style serving: Serving som tam as a salad bowl keeps the recognisable salty-sour-sweet flavour profile while making it feel more substantial for lunch.

Instructions
- Make the dressing: crush the garlic to a paste, then whisk it in a large bowl with the palm sugar, hot chilli powder, tamarind paste, fish sauce, and the juice of both limes. Whisk until the sugar dissolves and the dressing tastes punchy, balancing salty, sour and sweet.
- Trim the green beans, then slice them into short lengths. Halve the cherry tomatoes.
- Peel the papaya, halve it, and scrape out the seeds. Shred the flesh into fine strands using a grater, then add it to the bowl with the beans and tomatoes.
- Toss everything very well for 1 minute so the papaya softens slightly and takes on the dressing. Taste and adjust the heat by adding a little more hot chilli powder if you like.
- Roughly crush the roasted peanuts and tear the fresh coriander and fresh mint. Fold most through the salad, then divide between two bowls and scatter over the remaining peanuts and herbs to finish.
Recipe notes
Tips
- Use a firm, unripe papaya for the right crunch; if it feels soft or smells very sweet, it will turn watery once dressed.
- For the best texture, toss the papaya with the dressing just before serving so it stays crisp.
- If serving to anyone who is pregnant, elderly, or immunocompromised, use pasteurised fish sauce and wash the herbs and vegetables thoroughly.
Substitutions
- Replace Hot chili powder with a smaller amount of Hot chili powder for a milder bowl, then add more at the table to taste.
- Replace Palm sugar with Granulated sugar for a cleaner sweetness.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If you must store it, refrigerate in a sealed container and eat within 24 hours; the papaya will soften and release liquid. Stir well before serving.
