Brazilian Caldo Verde (Kale and Sausage Soup)
Why this recipe works
- Creamy without dairy: Blended Yukon Gold potatoes create a silky, full-bodied soup base without needing cream.
- Smoky depth: Browning the smoked sausage first renders flavourful fat into the pot before the potatoes and stock are added.
- Fresh finish: Finely shredded kale is stirred in near the end, keeping it tender, vivid and lightly textured against the smooth soup.

Authenticity notes
- Brazilian-Portuguese roots: Caldo verde is closely associated with Portuguese cooking and is also widely enjoyed in Brazilian home kitchens, where smoked sausage adds a savoury, familiar depth.
- Fine shreds matter: The kale is typically sliced very thinly so it softens quickly and threads through the smooth potato base rather than sitting in large pieces.
Texture tips
- For a silkier soup: Blend until completely smooth before adding the kale, especially if using a jug blender in batches.
- Keep the kale bright: Add the kale only at the end and simmer briefly, just until tender, so it keeps its colour and light bite.
- Adjust the body: If the soup thickens as it sits, loosen it gently with a splash of water or stock while reheating.
Ingredient notes
- Choose a smoked sausage: A well-seasoned smoked sausage gives the soup its savoury backbone, so use one with enough flavour to season the broth as it simmers.
- Slice potatoes small: Smaller potato chunks cook more evenly and blend more smoothly into the soup base.
Make-ahead tips
- Make ahead: The soup can be cooked in advance and refrigerated once cool; the flavour holds well for several days.
- Reheat gently: Warm in a saucepan over low to medium heat until piping hot, adding a little water if the potato base has thickened.
- Freezer-friendly: Freeze once completely cooled, then defrost overnight in the fridge before reheating gently.

Instructions
- Heat 1 tbsp of the olive oil in a large pot over medium heat. Finely chop the onion, then cook for 6 to 8 minutes until soft and translucent. Crush in the garlic and cook for 30 seconds until fragrant.
- Slice the smoked sausage into rounds and add to the pot. Cook for 4 to 5 minutes, stirring, until the edges start to colour and the fat renders slightly.
- Peel the potatoes and cut into small chunks, then add them to the pot with the chicken stock, fine sea salt, and black pepper. Bring to the boil, then reduce to a gentle simmer. Cook for 18 to 22 minutes, until the potatoes are very tender.
- Blend the soup until silky smooth, either with an immersion blender in the pot or in batches in a blender. Return to a gentle simmer if needed. Taste and adjust seasoning with a little more fine sea salt and black pepper if you like.
- Strip the kale leaves from any tough stems and shred finely. Stir the kale into the soup and simmer for 3 to 5 minutes, until tender but still bright. Take off the heat and stir in the remaining 1 tbsp olive oil just before serving.
Recipe notes
Tips
- For the classic texture, shred the kale very finely so it softens quickly and threads through the soup.
- If blending in a jug blender, let the soup cool for a few minutes and blend in batches to avoid splashes.
Substitutions
- Replace Chicken stock with Vegetable broth for a lighter, less meaty base.
- Replace Kale with Baby spinach for a softer, milder finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over low to medium heat until piping hot, adding a splash of water if it thickens. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
