Taktouka (Moroccan Tomato and Pepper Salad)

In Moroccan cooking, taktouka sits somewhere between a cooked salad, a dip and a vegetable relish. Ripe tomatoes and softened red pepper are gently reduced with garlic, olive oil, cumin and sweet paprika until the mixture turns thick, glossy and almost jammy, with the oil just separating at the edges. Served at room temperature, it is made for scooping up with bread as a starter, but it also works well alongside grilled dishes, couscous or other small plates. The flavour is savoury, lightly tangy and warmly spiced rather than hot, with fresh parsley added at the end for lift.

Why this recipe works

  • Layered savoury flavour: Cooking the garlic and spices briefly in olive oil helps release their aroma before the tomatoes reduce.
  • Balanced tomato brightness: Ripe tomatoes bring acidity and sweetness, while olive oil and softened pepper round out the sharper edges.
  • Good served later: The salad is designed to be served at room temperature, so it suits advance preparation and relaxed sharing.

Authenticity notes

  • Cooked, not raw: Taktouka is reduced into a thick cooked salad rather than tossed fresh, giving it a concentrated tomato and pepper flavour.
  • Serve with bread: Bread is the natural pairing, used to scoop up the soft vegetables and olive oil-rich sauce.
  • Room-temperature serving: It is commonly served warm or at room temperature as part of a spread of small salads or appetisers.

Ingredient notes

  • Use ripe tomatoes: Ripe tomatoes give the best balance of sweetness, acidity and body once reduced.
  • Paprika choice matters: Sweet paprika keeps the flavour soft and rounded; smoked paprika gives a deeper, more pronounced smoky note.
  • Cut the pepper small: Small pieces soften more evenly and help the salad reach a cohesive, spoonable texture.

Common mistakes

  • Letting it catch: Once the tomatoes begin to reduce, stir regularly and lower the heat if the mixture starts sticking to the pan.
  • Stopping too early: The salad should be thick and jammy, not watery; continue simmering gently until the oil begins to show at the edges.
  • Not seasoning at the end: Taste after cooling slightly, as reduced tomatoes and olive oil often need a final adjustment of salt or pepper.

Make-ahead tips

  • Cook in advance: Taktouka holds well in the fridge and can be brought back to room temperature before serving.
  • Warm gently if needed: Reheat over a low heat and loosen with a small splash of water if the salad has thickened too much.
  • Freezer-friendly: Freeze once fully cooled, then defrost in the fridge before warming gently or serving at room temperature.

  1. Core and deseed the red pepper, then cut into small pieces. Roughly chop the tomatoes. Finely chop the garlic and parsley, keeping the parsley aside for later.
  2. Warm the extra virgin olive oil in a large frying pan over a medium heat. Add the red pepper with a pinch of fine sea salt and cook for 10 to 12 minutes, stirring often, until softened and starting to take on a little colour.
  3. Stir in the garlic, ground cumin and sweet paprika and cook for 30 to 60 seconds until fragrant. Add the tomatoes, remaining fine sea salt and black pepper. Bring to a gentle simmer.
  4. Simmer over a low to medium-low heat for 15 to 18 minutes, stirring regularly, until the mixture is thick and jammy and the oil begins to separate slightly at the edges. If it starts to catch, lower the heat and stir more often.
  5. Take off the heat and stir through most of the fresh parsley, reserving a little to finish. Taste and adjust with a little more fine sea salt or black pepper if needed. Leave to cool to room temperature before serving, topped with the remaining parsley.

Tips

  • For the best texture, keep the simmer gentle and stir often so the tomatoes reduce without scorching.
  • If you are serving vulnerable groups, make sure the salad cools quickly: spread it in a shallow dish, then refrigerate once no longer steaming.

Substitutions

  • Replace Fresh parsley with Fresh coriander for a more citrusy, herb-forward finish.
  • Replace Sweet paprika with Smoked paprika for a deeper, smokier flavour.

Storage

  • Refrigerate up to 4 days
  • Cool completely, then refrigerate in a sealed container. Serve at room temperature, or gently warm in a saucepan over a low heat; add a small splash of water if it has thickened too much. Freeze in a sealed container for up to 2 months and defrost overnight in the fridge.
