Farrotto con Verdure di Stagione (Spelt Risotto with Seasonal Vegetables)
Why this recipe works
- Creamy without heaviness: Adding hot stock gradually helps the pearled spelt release starch, creating a risotto-like texture while keeping the grains distinct.
- Layered savoury flavour: Toasting the spelt, reducing the wine and finishing with parmesan build depth around the sweet leek, carrot and courgette.
- Flexible seasonal base: The method works well with different tender vegetables, making it easy to adapt to what is in season.

Ingredient notes
- Use pearled spelt: Pearled spelt is the right choice here because it cooks more quickly than whole spelt and gives a softer, creamier result.
- Keep the vegetables small: Small, even dice help the carrot and courgette cook through quickly and distribute evenly through the grains.
- Changing the grain: Other grains may need different cooking times and liquid, so adjust gradually rather than adding all the stock at once.
Timing notes
- Prep before starting: Have the vegetables cut and the parmesan grated before the spelt goes into the pan; the cooking stage needs regular attention.
- Short rest for gloss: Resting off the heat after adding the parmesan lets the farrotto settle into a glossy, spoonable consistency.
Common mistakes
- Letting the stock cool: Cold stock slows the cooking and can make the texture less creamy, so keep it at a gentle simmer.
- Stopping too soon: The spelt should be tender but still have a slight bite; taste near the end rather than relying only on the clock.
- Not stirring near the end: As the mixture thickens, stir often so the grains release starch without catching on the base of the pan.
Make-ahead tips
- Good for planned leftovers: Cool leftovers quickly and refrigerate in a sealed container for up to 3 days.
- Reheat gently: Warm in a saucepan with a splash of vegetable stock, stirring until piping hot and creamy again.

Ingredients
Instructions
- Pour the vegetable stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. Grate the parmesan and set it aside.
- Trim and wash the leek well, then slice it. Peel the carrots and cut them into small dice; cut the courgettes into small dice too.
- Heat 2 tbsp of the olive oil in a large frying pan over a medium heat. Add the leek and cook for 3 to 4 minutes until softened, then stir in the carrots and cook for 4 minutes more.
- Stir in the courgette and cook for 2 minutes, then tip the vegetables into a bowl. Add the remaining 1 tbsp olive oil to the pan, add the spelt, and toast for 2 minutes, stirring so it does not catch.
- Pour in the dry white wine and let it bubble until almost fully absorbed. Add a ladle of hot stock and stir; once it is mostly absorbed, add another ladle and repeat.
- Continue adding stock a ladle at a time, stirring often, for 18 to 22 minutes until the spelt is tender with a slight bite and the mixture looks creamy. You may not need every last drop of stock, or you may need a little more time depending on the spelt.
- Fold the vegetables back into the pan and warm through for 2 minutes. Take off the heat, stir in the parmesan and black pepper, and rest for 2 minutes so it turns glossy and spoonable.
Recipe notes
Tips
- Keep the stock at a gentle simmer; adding cold stock slows cooking and makes the farrotto less creamy.
- Stir often, especially towards the end, to help the spelt release starch and to prevent it catching on the base of the pan.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use a dry white wine that has been brought to a full simmer so the alcohol cooks off thoroughly.
Substitutions
- Replace Dry White Wine with Vegetable stock for an alcohol-free version; add it in the same amount and continue with the recipe.
- Replace Parmesan with Grana padano cheese for a slightly milder, sweeter finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of vegetable stock, stirring until piping hot and creamy again.
