Montadito de Lomo y Pimientos (Pork Loin and Pepper Sandwiches)
Why this recipe works
- Fast to cook: Thin pork steaks and a quick pepper-and-onion sauté keep the whole sandwich within a short cooking window.
- Simple, savoury depth: Garlic, olive oil and smoked paprika give the pork and vegetables a fuller flavour without needing a long marinade.
- Good bread-to-filling balance: Crusty white bread soaks up a little of the juices while still providing structure and chew.

Authenticity notes
- Spanish home-style approach: Montaditos are small filled breads often served casually as tapas or snacks; this version keeps the focus on pork loin, peppers and good bread.
- Flexible filling: Lomo with peppers is a familiar combination, but the same format is often adapted with different meats, cheeses or vegetables.
Ingredient notes
- Use smoked paprika for character: Smoked paprika gives the pork its distinctive savoury warmth; sweet paprika makes the sandwich softer and less smoky.
- Choose bread with structure: A thick-cut crusty loaf works better than very soft bread because it can hold the warm pork and peppers without collapsing.
- Slice the pork evenly: Even slices cook at the same pace, helping the pork brown quickly without becoming dry at the edges.
Common mistakes
- Overcooking the pork: Pork loin is lean, so cook it just until done and let it rest briefly before layering it into the bread.
- Rushing the peppers: Keep the peppers and onions over a moderate heat so they soften and lightly caramelise rather than scorching.
- Assembling too early: Build the montaditos just before serving so the bread absorbs flavour without turning wet.
Make-ahead tips
- Store the filling separately: Keep the pork and pepper mixture in separate airtight containers, then assemble with fresh bread when ready to serve.
- Reheat in a pan: Warm the pork and peppers in a frying pan over a medium heat until piping hot, adding the bread only at the end.
- Best assembled fresh: Toast or warm the bread shortly before serving to preserve the crust and keep the sandwich from becoming heavy.

Ingredients
Instructions
- Slice the pork into thin steaks, about 1 cm thick. Peel and finely slice the garlic. Season the pork with half the fine sea salt and all the smoked paprika.
- Heat 1 tbsp of the olive oil in a frying pan over a medium heat. Add the fresh onion and pepper mix with a pinch of the remaining salt and cook for 8 to 10 minutes, stirring, until softened and lightly caramelised. Stir in the garlic for 30 seconds, then tip the mixture onto a plate.
- Add the remaining 2 tbsp olive oil to the pan and increase the heat to medium-high. Sear the pork for 2 to 3 minutes per side, until browned and just cooked through. Rest the pork for 2 minutes, then slice if needed for easier layering.
- Warm the crusty white bread briefly in the dry pan for 30 to 60 seconds per side. Pile the pork onto the bread, then spoon over the sautéed peppers and onions. Serve straight away while warm.
Recipe notes
Tips
- Keep the pork slices even in thickness so they cook quickly without drying out.
- If the pan looks dry while cooking the peppers, add a small splash of water and keep stirring until it evaporates and the vegetables soften.
- For anyone who is pregnant, elderly, or immunocompromised, cook the pork until piping hot throughout with no pink remaining.
Substitutions
- Replace Crusty white bread with Brioche bread for a softer, richer montadito.
- Replace Smoked paprika with Sweet paprika for a milder, less smoky flavour.
- Replace Olive oil with Virgin olive oil for a fruitier finish.
Storage
- Refrigerate up to 2 days
- Store the pork and the pepper mixture separately in airtight containers. Reheat the pork and peppers in a frying pan over a medium heat until piping hot, then assemble with fresh bread.
