Vegan Black-Eyed Pea Stew
Why this recipe works
- Deep savoury base: Softened onion, celery, garlic and smoked paprika build a rounded flavour before the peas and tomatoes are added.
- Bright finish: Apple cider vinegar is stirred in at the end, sharpening the stew without overpowering the earthy black-eyed peas.
- Good for batch cooking: The stew keeps well, freezes in portions and reheats easily with a little extra stock if it thickens.

Ingredient notes
- Use dried black-eyed peas: Dried peas give the stew body as they simmer and help create a naturally thick, spoonable texture.
- Smoked paprika adds depth: It brings a savoury, smoky note without meat. Hot paprika can be used if you prefer a warmer finish.
- Add vinegar at the end: Stirring in the vinegar after the peas are tender keeps the acidity fresh and lets you adjust the brightness to taste.
Common mistakes
- Relying only on the timer: Dried pulses can vary, so keep simmering until the peas are fully tender rather than stopping strictly at the stated time.
- Scorching the paprika: Bloom the smoked paprika briefly and keep it moving; if it catches, it can turn bitter.
- Letting it become too thick too soon: If the stew reduces before the peas are soft, loosen it with a little more stock and continue simmering gently.
Make-ahead tips
- Flavour improves as it rests: The smoky tomato base settles well overnight, making leftovers especially good the next day.
- Reheat gently: Warm in a saucepan over a low heat, adding a splash of stock if needed, until piping hot throughout.
- Freeze in portions: Cool completely, freeze in sealed containers and defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Heat the olive oil in a large pot over a medium heat. Finely chop the onion and celery, then add to the pot and cook for 8 to 10 minutes until softened and lightly golden.
- Crush or finely chop the garlic and stir it in for 1 minute until fragrant. Add the smoked paprika and stir for 30 seconds to bloom the spice without letting it catch.
- Add the canned tomatoes, black-eyed peas, vegetable stock and thyme sprigs. Bring to the boil, then reduce to a gentle simmer and cook, partially covered, for 55 to 60 minutes until the peas are tender and the stew is thick.
- Remove the thyme sprigs, then stir in the apple cider vinegar. Simmer for 2 to 3 minutes, then taste and adjust with a little more vinegar if you want it brighter.

Serving suggestions
This recipe pairs well with:
Tips
- If the stew thickens too much before the peas are tender, add a splash more vegetable stock and keep simmering until the peas are soft.
- For a thicker, creamier texture, mash a ladleful of peas against the side of the pot, then stir back through.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the stew is simmered until the peas are fully tender and the stew is piping hot throughout.
Substitutions
- Replace Fresh thyme with 1 tsp Dried thyme, added with the smoked paprika.
- Replace Smoked paprika with Hot paprika for a warmer, spicier finish.
- Replace Apple cider vinegar with White wine vinegar for a cleaner, sharper acidity.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over a low heat, adding a splash of vegetable stock if needed, until piping hot. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
