Jambalaya (Creole Rice Dish with Chicken and Andouille)
Why this recipe works
- Built-in depth: Browning the chicken and andouille first creates savoury fond in the pot, which flavours the tomato and stock base.
- One-pot rice cooking: The rice cooks directly in the seasoned liquid, absorbing the chicken, sausage, tomato and vegetable flavours as it turns tender.
- Hearty and satisfying: Tender rice, smoky sausage and juicy chicken make this a filling dinner with bold seasoning and minimal fuss.

Adjust the heat
- For a gentler jambalaya: Use a mild Cajun or Creole seasoning and choose a less spicy smoked sausage if your andouille is particularly hot.
- For more heat: Add extra Cajun seasoning gradually, or finish individual portions with hot sauce so the whole pot stays balanced.
- Keep the seasoning rounded: Taste before serving and adjust salt and spice at the end, as andouille and Cajun seasoning can vary widely.
Timing notes
- Let the rice steam before serving: The covered rest after cooking helps the rice finish absorbing liquid and gives a fluffier texture.
- Prep everything first: Once the pot is hot, the recipe moves quickly through browning, sautéing and simmering, so diced vegetables and sliced sausage should be ready before cooking starts.
Common mistakes
- Simmer gently once the rice is added: Too much heat can make the base catch before the rice is fully tender.
- Brown the chicken in a single layer: Crowding the pot makes the chicken steam rather than brown, reducing the savoury flavour in the finished dish.
- Avoid lifting the lid too often: Keeping the pot covered helps the rice cook evenly and prevents too much steam from escaping.
Make-ahead tips
- Good for planned leftovers: Cool quickly, then refrigerate in a sealed container and reheat gently with a little water or stock until piping hot.
- Freezes well: Freeze cooked portions once cooled, then defrost overnight in the fridge before reheating thoroughly.

Ingredients
Instructions
- Cut the chicken thighs into bite-sized pieces and season with the fine sea salt and cajun seasoning. Slice the andouille sausage. Dice the yellow onion, celery and green pepper, then finely chop the garlic.
- Heat the vegetable oil in a large heavy pot over medium-high heat. Brown the chicken in a single layer for 4 to 6 minutes, turning, until well coloured (it does not need to be cooked through yet). Transfer to a plate.
- Add the andouille sausage to the pot and cook for 3 to 4 minutes until browned and the fat has rendered. Add the onion, celery and green pepper and cook for 6 to 8 minutes, stirring, until softened and starting to take on colour. Stir in the garlic for 30 seconds until fragrant.
- Stir in the canned chopped tomatoes, scraping up any browned bits from the base of the pot. Pour in the chicken stock and add the bay leaves, then bring to a lively simmer. Return the chicken (and any juices) to the pot.
- Stir in the long-grain white rice and bring back to a steady simmer. Cover, reduce the heat to low, and cook for 20 to 22 minutes until the rice is tender and most of the liquid is absorbed. Stir once halfway through to prevent sticking, keeping the lid on as much as possible.
- Turn off the heat and leave the pot covered for 5 minutes so the rice can finish steaming. Remove the bay leaves, then fluff with a spoon. Slice the spring onion and scatter over the top to serve.
Recipe notes
Tips
- Keep the heat low once the rice goes in: a gentle simmer prevents the base catching before the rice is tender.
- If your andouille sausage is already fully cooked, you are only aiming to brown it for flavour and warm it through.
- If serving vulnerable groups, ensure the chicken is cooked until piping hot throughout with no pink remaining.
Substitutions
- Replace cajun seasoning with creole seasoning for a slightly more herb-forward flavour.
- Replace chicken thighs with chicken breast for a leaner jambalaya; brown briefly, then avoid overcooking by keeping the simmer gentle.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat in a saucepan with a splash of water or chicken stock, covered, over low heat until piping hot, stirring occasionally. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
