Air Fryer Whole Chicken
Why this recipe works
- Crisp skin: Patting the chicken dry and cooking it in the air fryer encourages the skin to turn golden and crisp without needing a conventional roasting tray.
- Simple, savoury seasoning: Garlic, smoked paprika, thyme and lemon zest create a roast-chicken flavour profile that is smoky, aromatic and bright.
- Reliable doneness: Using a thermometer at the thickest part of the thigh makes it easier to cook the chicken safely without relying on guesswork.

Timing notes
- Rest before carving: Rest the chicken for 10 minutes so the juices settle and the meat carves more cleanly.
- Best served freshly cooked: The skin is at its crispest soon after resting, so carve and serve while the exterior still has texture.
Texture tips
- Dry the skin well: Moisture on the surface will soften the skin, so pat the chicken very dry before adding the seasoned oil.
- Check the thigh, not the breast: The thickest part of the thigh should reach 75°C (165°F); this gives a safer and more accurate reading for a whole bird.
Ingredient notes
- Paprika choice: Smoked paprika gives the chicken a deeper, barbecue-like savouriness, while sweet paprika keeps the flavour gentler.
- Use the lemon twice: Zest goes into the rub for fragrance, while the roasted lemon halves add brightness when squeezed over the carved chicken.
Make-ahead tips
- Use leftovers flexibly: Carved chicken can be refrigerated and used for sandwiches, salads, grain bowls or quick dinners.
- Reheat gently: Warm leftovers in a 180°C (355°F) oven until piping hot, or use the air fryer at 170°C (340°F) for a quicker reheat.
- Freeze carved meat: Cool the chicken, carve it, then freeze in sealed portions so it can defrost evenly overnight in the fridge.

Ingredients
Instructions
- Heat the air fryer to 180°C (355°F). Crush the garlic to a paste, then mix with the olive oil, smoked paprika, dried thyme, salt and pepper. Zest the lemon into the mix, then cut the lemon in half.
- Rub the seasoned oil all over the chicken, including under the skin over the breasts where you can. Put the lemon halves inside the cavity. Place the chicken breast-side down in the air fryer basket.
- Air fry for 30 minutes, then carefully turn the chicken breast-side up. Continue to cook for 25 to 30 minutes, until the skin is deeply golden and the thickest part of the thigh reads 75°C (165°F).
- Lift the chicken onto a board and rest for 10 minutes before carving. Squeeze the roasted lemon over the chicken, then spoon over any juices collected in the basket.
Recipe notes
Tips
- Dry skin equals crisp skin: pat the chicken very dry before rubbing on the seasoned oil.
- If the skin is browning too fast, reduce the temperature to 170°C (340°F) for the final 10 to 15 minutes while the chicken finishes cooking.
- For vulnerable groups, make sure the chicken reaches 75°C (165°F) in the thickest part of the thigh before serving.
Substitutions
- Replace Smoked paprika with Sweet paprika for a gentler flavour.
- Replace Dried thyme with Dried rosemary if that is what you have.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate within 2 hours in a sealed container for up to 3 days. Freeze carved chicken for up to 2 months; defrost overnight in the fridge. Reheat in a 180°C (355°F) oven until piping hot, or warm slices in the air fryer at 170°C (340°F) for 4 to 6 minutes.
