Air Fryer Garlic Herb Chicken Drumsticks
Why this recipe works
- Crisp skin, juicy meat: Drying the drumsticks and cooking them in a single layer helps the skin brown while the bone-in meat stays succulent.
- Seasoning that clings: Grated garlic, lemon zest, herbs and oil form a paste that coats the chicken evenly and seasons the skin well.
- Low-effort cooking: The air fryer delivers browned drumsticks without oven preheating or pan-frying, keeping the method simple and efficient.

Texture tips
- For better browning: Pat the drumsticks thoroughly dry before adding the seasoning paste; excess moisture can stop the skin crisping.
- Avoid overcrowding: Keep the drumsticks in a single layer so hot air can circulate around the skin. Cook in batches if the basket is small.
Common mistakes
- Browning too quickly: If the skin darkens before the chicken is cooked through, reduce the air fryer to 190°C (375°F) for the final minutes.
- Check the thickest part: Pierce the thickest part of the drumstick; the juices should run clear before serving.
Ingredient notes
- Use skin-on drumsticks: Skin-on drumsticks are best here because the skin protects the meat and crisps as it cooks.
- Paprika choice: Sweet paprika gives gentle colour and warmth; smoked paprika adds a deeper, barbecue-style note.
- Herb flexibility: Dried oregano works well in the paste, while dried thyme gives a slightly earthier flavour.
Make-ahead tips
- Reheat in the air fryer: Reheat chilled drumsticks at 180°C (355°F) until piping hot to help revive the skin.
- Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Pat the chicken drumsticks dry. Finely grate the garlic, then finely zest 1 lemon and squeeze its juice into a mixing bowl. Cut the remaining lemon into wedges for serving.
- Add the olive oil, dried oregano, sweet paprika and black pepper to the bowl and mix to a paste. Add the drumsticks and rub well all over, getting some seasoning under the skin where you can. Leave to stand while you preheat the air fryer.
- Preheat the air fryer to 200°C (390°F) for 3 minutes. Arrange the drumsticks in the basket in a single layer, skin-side up where possible. Air-fry for 10 minutes.
- Turn the drumsticks using tongs and air-fry for a further 12 to 15 minutes, until well browned and the juices run clear when the thickest part is pierced. If your basket is small, cook in batches to avoid overcrowding. Rest for 2 minutes.
- Finely chop the fresh parsley. Squeeze over a little lemon to taste, then sprinkle with parsley. Serve straight away with the remaining lemon wedges.

Tips
- Drying the drumsticks well before seasoning helps the skin brown more evenly in the air fryer.
- If the drumsticks brown quickly, drop the temperature to 190°C (375°F) for the last 5 minutes so they cook through without over-darkening.
Substitutions
- Replace dried oregano with dried thyme for a slightly more earthy, woodsy flavour.
- Replace sweet paprika with smoked paprika for a smokier finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 2 months; defrost overnight in the fridge. Reheat in the air fryer at 180°C (355°F) for 6 to 10 minutes until piping hot.
