Flan Casero (Spanish Caramel Custard)

Flan casero is the Spanish home-style version of caramel custard: a gently baked egg-and-milk pudding turned out so its amber caramel becomes a glossy sauce. Its character comes from the clean simplicity of the custard and the slight bitterness of the caramel, which keeps the dessert from feeling overly sweet. A water bath gives the flan its signature silky set, with firm edges and a soft wobble at the centre. Served well chilled, it is elegant enough for a dinner-party dessert yet practical for making ahead, as the texture improves once fully cold and the caramel has loosened over the top.

Why this recipe works

  • Silky custard: A low oven and water bath help the egg custard set gently rather than turning firm or grainy.
  • Bittersweet balance: Deep amber caramel brings a slight bitterness that offsets the sweetness of the custard.
  • Designed to chill: The flan needs time in the fridge, making it well suited to preparing ahead of serving.

Timing notes

  • Chill until fully set: The custard should be completely cold before unmoulding so it holds its shape cleanly.
  • Invert close to serving: Turn the flan out shortly before serving so the caramel runs over the top without sitting too long on the plate.
  • Cool before refrigerating: Let the tin come to room temperature before covering and chilling to reduce condensation on the surface.

Texture tips

  • Keep the custard smooth: Whisk gently and strain the mixture before baking to remove egg strands and minimise bubbles.
  • Do not overbake: Remove the flan when the edges are set but the centre still has a gentle wobble; it will finish setting as it cools.
  • Clear surface bubbles: Skim off visible bubbles before baking to help prevent a pitted top once the flan is turned out.

Common mistakes

  • Watch the caramel closely: Caramel can move from deep amber to burnt very quickly, so have the tin ready before it reaches the right colour.
  • Avoid too much air: Beating the eggs vigorously can create foam, which may lead to bubbles in the finished custard.
  • Use the wobble test: A fully firm centre in the oven usually means the custard has gone too far; look for a soft set instead.

Ingredient notes

  • Whole milk matters: Whole milk gives the custard enough body while keeping the texture light rather than heavy.
  • Caramel depth changes the flavour: A paler caramel tastes sweeter, while a deeper amber caramel gives the flan its characteristic bittersweet edge.
  • Vanilla can be adjusted: Vanilla extract keeps the flavour simple, while vanilla bean paste gives a more pronounced vanilla note.

  1. Heat the oven to 160°C (320°F). Put a 18 to 20 cm cake tin inside a deep roasting pan, and set a kettle of water to boil.
  2. Make the caramel: put the caster sugar and water in a saucepan over medium heat and swirl gently until the sugar dissolves. Increase the heat and cook without stirring until deep amber, 6 to 10 minutes; watch closely towards the end.
  3. Immediately pour the caramel into the cake tin and tilt to coat the base evenly. Set aside for 5 minutes to harden.
  4. In a mixing bowl, whisk the eggs with the remaining caster sugar and the salt just until combined, without making it too frothy. Whisk in the whole milk and vanilla extract.
  5. Strain the custard through a sieve into a jug, then pour it into the caramel-lined tin. Skim off any bubbles from the surface if needed.
  6. Pour boiling water into the roasting pan to come about halfway up the sides of the tin. Bake for 45 to 60 minutes, until the edges are set and the centre still has a gentle wobble.
  7. Carefully lift the tin out of the water bath and leave to cool to room temperature. Cover and chill for at least 2 hours, or until fully cold and set.
  8. To serve, run a thin knife around the edge of the flan. Invert onto a rimmed plate and lift off the tin so the caramel runs over the top.

Recipe notes

Tips

  • For the smoothest custard, whisk gently and strain before baking; too much air makes bubbles and a pitted surface.
  • Caramel goes from amber to burnt quickly, so have the tin ready and pour as soon as it reaches a deep golden colour.
  • This flan contains eggs; if serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure it is baked until properly set.

Substitutions

  • Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
  • Replace Whole milk with milk-and-cream for a richer, more luxurious custard.

Storage

  • Refrigerate up to 3 days
  • Keep covered in the fridge and serve chilled. For best texture, do not freeze; the custard can weep and turn grainy after thawing.
