French Lentil and Roasted Vegetable Bowl with Dijon Dressing
Why this recipe works
- Bright, balanced dressing: Lemon juice and Dijon mustard cut through the earthy lentils and sweet roasted vegetables.
- Good texture balance: Firm lentils, tender roasted vegetables and fresh parsley keep the bowl varied rather than soft or heavy.
- Holds well: The lentils and vegetables can be cooked ahead, then dressed just before serving for a practical lunch option.

Ingredient notes
- Choose lentils that hold their shape: Green lentils are well suited here because they stay firm after simmering. Avoid red or yellow split lentils, which soften into a purée.
- Adjust the sharpness: If the bowl tastes flat, add a little more lemon juice to the dressing. If it tastes too sharp, soften it with a small splash of olive oil.
- Use fresh herbs: Fresh parsley gives the cleanest finish. Dried herbs will not provide the same lift in this simple lentil bowl.
Texture tips
- Keep the lentils intact: Simmer the lentils gently rather than boiling them hard, and drain them as soon as they are tender but still holding their shape.
- Roast for browned edges: Spread the vegetables out on the tray so they roast rather than steam, turning once for even colour.
Make-ahead tips
- Store separately for the best texture: Keep the lentils, roasted vegetables and dressing in separate airtight containers, then combine shortly before serving.
- Reheat gently: Warm the lentils and vegetables in a 180°C (355°F) oven, then add the dressing and parsley after reheating.
- Good for packed lunches: The bowl also works cold or at room temperature, making it suitable for preparing ahead for lunch.
Serving ideas
- Serve with bread or greens: Add crusty bread for a more filling meal, or serve alongside peppery salad leaves for a lighter plate.
- Finish with extra herbs: A final handful of parsley, or fresh mint for a brighter variation, keeps the bowl fresh and aromatic.

Instructions
- Heat the oven to 220°C (430°F). Peel and cut the onion into wedges, then peel and finely chop the garlic. Rinse the lentils well in a colander.
- Put the lentils in a saucepan with the onion and half the garlic, then cover with plenty of water. Bring to the boil, then reduce to a gentle simmer and cook for 20 to 25 minutes until tender but still holding their shape. Drain well, then return to the pan and season with 0.25 tsp of the fine sea salt.
- While the lentils cook, peel the carrots and cut into batons; cut the courgette into thick half-moons. Tip onto a baking tray and toss with 1 tbsp of the extra virgin olive oil, the ground cumin, the black pepper, and 0.5 tsp of the fine sea salt. Roast for 18 to 22 minutes, turning once, until browned at the edges and tender.
- Finely chop the fresh parsley. In a mixing bowl, whisk the remaining garlic with the juice of the lemon, the Dijon mustard, the remaining 2 tbsp extra virgin olive oil, and the remaining 0.5 tsp fine sea salt until emulsified. Taste and adjust with a little more lemon juice if you want it sharper.
- Divide the warm lentils between two bowls and top with the roasted carrots and courgettes. Spoon over the vinaigrette and finish with the parsley. Serve warm or let it cool to room temperature before eating.
Recipe notes
Tips
- For the best texture, keep the lentils at a gentle simmer rather than a rapid boil so they stay intact.
- If serving at room temperature, dress the lentils while they are still warm so they absorb the lemon and Dijon flavours.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a more textured dressing.
- Replace fresh parsley with fresh mint for a brighter, more summery finish.
Storage
- Refrigerate up to 3 days
- Store lentils, vegetables, and dressing separately in airtight containers for the best texture. Eat cold, or reheat the lentils and vegetables in a 180°C (355°F) oven for 10 minutes, then add the dressing and parsley just before serving.
