Arrosto di Vitello al Forno (Roast Veal)

In Italian cooking, arrosto di vitello al forno is a simple, elegant roast centred on tender veal and a restrained pan sauce. A boneless joint is seasoned with garlic, rosemary, olive oil and butter, then roasted over onions with white wine and stock so the meat stays moist while the juices develop savoury depth. The finished roast is rested, sliced neatly and served with the reduced cooking juices and softened onions. It is well suited to a Sunday lunch or relaxed dinner, with a mild, herby flavour that pairs easily with potatoes, greens or a crisp salad.

Why this recipe works

  • Aromatic pan juices: Onion, rosemary, garlic, wine and stock roast together, giving the sauce more depth than a last-minute gravy.
  • Classic roasting method: Starting the veal uncovered helps the surface brown before the wine and stock are added around the meat.
  • Tender, sliceable roast: A moderate oven temperature and resting time help keep the veal moist enough for clean, juicy slices.

Timing notes

  • Rest before slicing: Let the roast rest loosely covered before carving so the juices settle and the slices stay tender.
  • Serve after reducing the sauce: Carve the veal once the pan juices have reduced to a glossy spooning consistency.

Ingredient notes

  • Choose the right joint: Boneless veal shoulder works well here because it has enough structure and flavour for roasting without becoming heavy.
  • Use fresh herbs if possible: Fresh rosemary gives the roast a cleaner, more aromatic flavour than dried rosemary.
  • Pick a dry white wine: Use a dry white wine you would be happy to drink; overly sweet wine can make the pan sauce taste flat.

Texture tips

  • Use the thermometer: For pale, tender veal, aim for 63°C (145°F) in the centre before resting, unless cooking for vulnerable groups.
  • Slice neatly: Cut the rested veal across the grain into even slices for the most tender texture.

Serving ideas

  • Serve with potatoes or greens: Roast potatoes, mashed potatoes, sautéed greens or a bitter salad all work well with the rosemary pan sauce.
  • Pair with Italian white wine: A dry Italian white such as Verdicchio or Soave suits the veal’s gentle flavour and the wine-based sauce.

  1. Heat the oven to 180°C (355°F). Peel and thickly slice the onion, then scatter it in a roasting pan with the rosemary sprigs.
  2. Peel the garlic and crush it to a paste with the fine sea salt and black pepper. Rub the veal all over with the garlic mixture, then drizzle with the olive oil.
  3. Set the veal on top of the onion and rosemary, then dot the butter over the meat and around the pan. Roast for 20 minutes to start the browning.
  4. Pour in the dry white wine and beef stock around the veal (not over the top). Return to the oven and roast for 45 to 55 minutes, basting once or twice, until the centre reaches 63°C (145°F) for a pale, tender roast.
  5. Transfer the veal to a board and cover loosely; rest for 15 minutes. Keep the roasting pan and its juices for the sauce.
  6. Skim off excess fat from the pan juices, then pour the juices and onions into a saucepan. Simmer for 8 to 10 minutes until lightly reduced and glossy, then taste and adjust with a pinch more fine sea salt and black pepper if needed.
  7. Slice the veal and spoon the reduced pan juices over the top, serving the onions alongside. If the sauce thickens too much, loosen it with a splash of beef stock.

Recipe notes

Tips

  • For the juiciest slices, aim for 63°C (145°F) in the centre, then rely on the resting time to finish the cooking gently.
  • Baste with the pan juices once or twice during roasting to keep the surface moist and build a more flavourful sauce.
  • If serving vulnerable groups, cook the veal to at least 70°C (160°F) and rest well before slicing.

Substitutions

  • Replace Fresh rosemary with Fresh thyme for a softer, more floral herb note.
  • Replace Dry White Wine with Dry sherry for a slightly richer, nuttier pan sauce.

Storage

  • Refrigerate up to 3 days
  • Cool the veal and sauce, then refrigerate separately in airtight containers. Reheat slices gently in a 160°C (320°F) oven with a little sauce until piping hot; freeze well-wrapped slices and sauce for up to 2 months and defrost overnight in the fridge.
