Italian-Style Oven-Baked Chicken with Cherry Tomatoes, Rosemary and Lemon
Why this recipe works
- Efficient tray-bake method: The potatoes, chicken and tomatoes roast in stages on the same tray, so each ingredient cooks properly while sharing the same savoury juices.
- Layered pan flavour: Garlic, rosemary and chicken drippings season the potatoes, while the burst tomatoes create a light, naturally saucy finish.
- Bright finish: Lemon zest and juice added after roasting cut through the richness of the chicken skin and olive oil without dulling their flavour.

Timing notes
- Mostly hands-off cooking: The active work is brief; most of the time is spent roasting, with the potatoes started first so they become tender and browned.
- Serve soon after finishing: The chicken skin and potatoes are at their best shortly after the lemon and olive oil are tossed through the hot tray juices.
Texture tips
- Keep the skin exposed: Arrange the chicken thighs skin-side up and avoid covering them with tomatoes or potatoes so the skin can brown rather than steam.
- Give the tray enough space: A crowded tray traps moisture, which softens the potatoes and chicken skin. Use a tray large enough for the ingredients to sit in a single layer.
Ingredient notes
- Choose bone-in thighs: Bone-in, skin-on chicken thighs stay juicy during roasting and add more flavour to the tray juices than leaner cuts.
- Fresh rosemary works best: Fresh rosemary gives a cleaner, more aromatic flavour here; thyme is a good alternative if you prefer a softer herb note.
- Add lemon at the end: Finishing with lemon after roasting keeps the flavour bright and prevents the citrus from becoming harsh or cooked-out.
Make-ahead tips
- Prep ahead: The potatoes can be halved, the garlic crushed and the rosemary stripped in advance, ready to go straight onto the tray.
- Reheat gently: Reheat leftovers on a baking tray at 180°C (355°F) until piping hot, adding a small splash of water if the pan juices need loosening.
- Freezer-friendly leftovers: Cooked portions can be frozen once cooled, though the potatoes and chicken skin will be softer after thawing and reheating.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Halve any larger mixed baby potatoes so they cook evenly, then tip them onto a baking tray and toss with 1 tbsp of the extra virgin olive oil, half the fine sea salt, and a pinch of the black pepper.
- Roast the potatoes for 20 minutes, giving the tray a shake halfway through, until they are starting to colour. Meanwhile, pat the chicken thighs dry and season all over with the remaining fine sea salt and black pepper.
- Lightly crush the garlic cloves and strip the leaves from the fresh rosemary sprigs. Add the chicken to the tray, nestling it among the potatoes, then scatter over the garlic and rosemary and drizzle with 1 tbsp of the extra virgin olive oil.
- Roast for 25 minutes, turning the tray once, until the chicken skin is golden and the potatoes are nearly tender. Add the cherry tomatoes to the tray and roast for a further 15 minutes, until the tomatoes have burst and the chicken is cooked through.
- Finely zest the lemon over the hot tray, then squeeze in about half the lemon juice. Drizzle over the remaining extra virgin olive oil and use tongs to turn everything through the juices so they become glossy and lightly saucy.
Recipe notes
Tips
- For the best roast, keep the chicken thighs skin-side up and avoid crowding the tray so the skin browns rather than steams.
- If you have a thermometer, the chicken is ready when the thickest part reaches 75°C (165°F).
- If serving vulnerable groups, make sure the chicken is fully cooked through with no pink at the bone and the juices run clear.
Substitutions
- Replace Chicken thighs with Chicken drumsticks, using the same method and roasting until cooked through.
- Replace Fresh rosemary with Fresh thyme for a softer, more floral herb note.
- Replace Cherry tomatoes with Roma tomato, cut into wedges, and roast until softened and jammy.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 180°C (355°F) for 15 to 20 minutes until piping hot; add a small splash of water to loosen the pan juices if needed.
