Roasted Beetroot Buckwheat Grain Bowl with Cucumber and Dill
Why this recipe works
- Earthy, bright and herby: Roasted beetroot brings sweetness and depth, while lemon, cucumber and dill keep the bowl fresh rather than heavy.
- Good texture contrast: Tender buckwheat and beetroot are balanced by crisp cucumber and creamy goat’s cheese.
- Works for lunch prep: The cooked buckwheat and beetroot hold well in the fridge, with the fresh toppings added just before serving.

Ingredient notes
- Choose whole buckwheat groats: Whole groats give a nutty flavour and separate texture; cracked buckwheat will cook softer and more porridge-like.
- Rinse the buckwheat: Rinsing removes surface starch and helps prevent the cooked grains from becoming gluey.
- Add the cheese at the end: Soft goat’s cheese keeps its creamy contrast best when spooned on just before serving.
Timing notes
- Serve warm or at room temperature: The bowl is flexible, but the dressing absorbs best when spooned over the buckwheat while it is still warm.
- Use the roasting time: Cook the buckwheat and prepare the cucumber, dill and lemon dressing while the beetroot is in the oven.
Make-ahead tips
- Keep fresh toppings separate: Store the cucumber, dill and goat’s cheese separately from the cooked grains and beetroot to preserve their texture.
- Reheat before finishing: Warm the buckwheat and beetroot until piping hot, then add the cool cucumber, dressing, dill and cheese.
- Cook ahead for lunches: The buckwheat and roasted beetroot can be prepared in advance and assembled quickly when needed.
Serving ideas
- Add a simple side: Serve with rye bread or a small green salad if you want a more substantial lunch.
- Add crunch: Toasted seeds or nuts can add extra texture if serving the bowl at room temperature.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Scrub the beetroot, trim any long roots, then cut into bite-size wedges. Toss with 1 tbsp rapeseed oil, half the fine sea salt and a pinch of black pepper on a baking tray.
- Roast the beetroot for 30 to 35 minutes, turning once, until tender when pierced and lightly caramelised at the edges. If the tray looks dry, add a small splash of water to help the beetroot steam and finish cooking. Set aside while you cook the buckwheat.
- Meanwhile, rinse the buckwheat groats in a sieve until the water runs mostly clear. Tip into a saucepan with 350 ml water and the remaining fine sea salt, then bring to the boil. Reduce to a gentle simmer and cook for 12 to 15 minutes until tender and the water is absorbed.
- While the buckwheat cooks, halve the cucumber lengthways and slice into half-moons. Finely chop the fresh dill. Zest the lemon, then squeeze the juice into a mixing bowl.
- Whisk the lemon juice with the remaining 2 tbsp rapeseed oil, the lemon zest, and the remaining black pepper. Taste and adjust with a little more fine sea salt if needed. The dressing should be bright and lightly tangy.
- Fluff the buckwheat with a fork, then divide between two bowls. Top with the roasted beetroot and cucumber, then spoon over the dressing. Finish with goat cheese and fresh dill, and serve warm or at room temperature.
Recipe notes
Tips
- For the best texture, keep the buckwheat at a gentle simmer and avoid stirring too much, which can make it gluey.
- If your goat cheese is firm, crumble it; if it is very soft, dollop it on at the end so it stays creamy against the warm buckwheat.
- If serving at room temperature, dress the buckwheat while it is still warm so it absorbs the lemon and rapeseed oil dressing.
Substitutions
- Replace goat cheese with feta cheese for a saltier, firmer topping.
- Replace rapeseed oil with extra-virgin olive oil for a fruitier dressing.
- Replace fresh dill with fresh parsley for a milder, greener finish.
Storage
- Refrigerate up to 3 days
- Store the buckwheat and beetroot together in an airtight container, and keep the cucumber and goat cheese separate if possible. Reheat the buckwheat and beetroot in the microwave until piping hot, then add the cucumber, dill, dressing and goat cheese just before serving.
