Modern Moussaka Bowl with Aubergine and Lamb
Why this recipe works
- Classic flavour cues: Cinnamon, oregano, garlic and tomato give the lamb sauce the warm, savoury profile associated with moussaka.
- Roasted aubergine texture: Roasting the aubergine separately lets it brown and soften without turning watery in the sauce.
- Lighter creamy finish: Greek yoghurt gives the bowl a tangy, béchamel-style topping without needing a separate baked sauce.

Authenticity notes
- Modern bowl format: The flavours are inspired by Greek moussaka, but the dish is assembled as individual bowls rather than baked in layers.
- Yoghurt instead of béchamel: Greek yoghurt gives a lighter, tangier finish; crème fraîche can be used for a richer topping closer in feel to a creamy sauce.
Texture tips
- Brown the aubergine well: Spread the aubergine out on the tray so it roasts rather than steams, giving the bowl a deeper flavour and better texture.
- Keep the sauce glossy: Simmer the lamb sauce gently until slightly thickened, rather than reducing it hard, so it stays rich and spoonable.
Make-ahead tips
- Keep the yoghurt separate: Store the aubergine and lamb sauce together, but add the yoghurt and parsley only after reheating.
- Good for lunches: The cooked aubergine and lamb sauce keep well in the fridge for several days, making this suitable for prepared lunches.
Ingredient notes
- Choose firm aubergines: Firm aubergines with glossy skin roast more evenly and are less likely to collapse into a wet texture.
- Use pasteurised yoghurt when needed: For pregnant people, young children, older adults or anyone immunocompromised, choose pasteurised Greek yoghurt.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Cut the aubergines into 2 cm chunks and spread on a baking tray. Toss with 2 tbsp olive oil, 0.75 tsp salt and a good grind of pepper.
- Roast for 22 to 25 minutes, turning once, until the aubergine is deeply browned and tender. If it is colouring too fast, lower the oven to 200°C (390°F) for the final minutes. Set aside while you make the lamb sauce.
- Finely chop the onion and crush the garlic. Warm the remaining 1 tbsp olive oil in a large frying pan over medium heat, then cook the onion with a pinch of the remaining salt for 6 to 8 minutes until soft and lightly golden. Stir in the garlic for 30 seconds until fragrant.
- Add the minced lamb and cook for 6 to 8 minutes, breaking it up, until browned and any liquid has cooked off. Stir in the cinnamon and oregano and cook for 30 seconds. Season with the remaining salt and pepper.
- Pour in the passata, bring to a gentle simmer, then cook for 10 minutes until slightly thickened and rich. Taste and adjust seasoning if needed. Keep the heat low so the sauce stays glossy rather than reducing too hard.
- In a mixing bowl, stir the Greek yogurt with a pinch of salt and a little pepper until smooth. Roughly chop the parsley. Divide the roasted aubergine between two bowls, spoon over the lamb and tomato sauce, then finish with the yogurt and parsley.
Recipe notes
Tips
- For a more traditional moussaka feel, let the lamb sauce simmer until it is thick enough to mound on a spoon, then spoon it over the aubergine so the layers stay distinct.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised Greek yogurt.
Substitutions
- Replace Greek yogurt with crème fraîche for a richer, more classic-style topping.
- Replace dried oregano with fresh parsley stirred into the lamb sauce for a softer herb note, then use the remaining parsley to finish.
Storage
- Refrigerate up to 3 days
- Store the aubergine and lamb sauce together in an airtight container, and keep the Greek yogurt separate. Reheat the aubergine and sauce in a frying pan over medium-low heat until piping hot, then add the yogurt and parsley just before serving.
