Indian Millet Bowl (Spiced Millet with Cauliflower, Chickpeas and Raita)

A warm grain bowl gives Indian-inspired flavours a practical lunch format: fluffy millet as the base, roasted cauliflower and chickpeas for substance, and a cool cucumber raita to finish. The spices bring gentle warmth rather than heavy heat, with cumin, turmeric and garam masala coating the vegetables as they brown in the oven. Millet has a light, slightly nutty character that works well with the tangy yoghurt, fresh coriander and lemon. Served with the raita spooned over at the end, the bowl feels hearty but fresh, and the separate components make it easy to prepare ahead while keeping the cooling topping chilled.

Why this recipe works

  • Good texture contrast: Fluffy millet, browned cauliflower, chickpeas and cool cucumber yoghurt give the bowl a satisfying mix of soft, crisp-edged and creamy elements.
  • Freshness balances the spice: Lemon, cucumber and yoghurt cut through the warm cumin, turmeric and garam masala, keeping the dish bright rather than heavy.
  • Easy to prepare ahead: The millet and roasted vegetables store well, while the raita can be kept separate and added cold just before serving.

Ingredient notes

  • Rinse the millet first: Rinsing helps remove any dusty flavour and supports a lighter, fluffier grain once cooked.
  • Choose yoghurt for the texture you want: Whole milk yoghurt gives a softer raita, while Greek yoghurt makes it thicker and tangier.
  • Manage cucumber moisture: For a thicker raita, briefly drain the grated cucumber before mixing it with the yoghurt.

Make-ahead tips

  • Keep the raita separate: Store the millet and roasted vegetables together, but keep the cucumber yoghurt chilled separately so it stays fresh and cool.
  • Reheat gently: Warm the millet and vegetables until piping hot, adding a splash of water if the grains seem dry, then spoon over the cold raita.
  • Works well for lunches: The cooked components can be portioned in advance, making this a practical vegetarian lunch for several days.

Common mistakes

  • Skipping the millet rest: Leaving the cooked millet covered off the heat helps the grains finish steaming and separate more cleanly when fluffed.
  • Overcrowding the tray: Spread the cauliflower and chickpeas out well so they roast and brown rather than steam.
  • Storing everything together: Adding raita before storage can make the bowl watery; keep it separate until serving.

Dietary alternatives

  • To make it vegan: Use a plain unsweetened plant-based yoghurt for the raita, choosing one with enough body to hold the grated cucumber.
  • For a dairy-free bowl: Replace the yoghurt with a dairy-free alternative and adjust the lemon to keep the raita bright.
  • For gluten-free cooking: Millet and chickpeas are naturally gluten-free, but check spice blends and yoghurt labels if cooking for someone with coeliac disease.

Instructions

  1. Heat the oven to 220°C (430°F). Cut the cauliflower into small florets and drain and rinse the chickpeas in a colander.
  2. Tip the cauliflower and chickpeas onto a baking tray. Toss with the rapeseed oil, ground cumin, ground turmeric, garam masala and 0.75 tsp of the fine sea salt, then roast for 20 to 25 minutes, turning once, until browned and tender.
  3. Meanwhile, rinse the millet, then put it in a saucepan with the water and the remaining 0.5 tsp fine sea salt. Bring to the boil, cover, then cook on a low heat for 15 minutes until the water is absorbed; take off the heat and leave covered for 5 minutes, then fluff with a fork.
  4. Make the raita: coarsely grate the cucumber into a bowl, then stir in the whole milk yogurt. Finely chop most of the fresh coriander and mix it through, then squeeze in a little lemon juice to taste.
  5. Divide the millet between two bowls and top with the roasted cauliflower and chickpeas. Spoon over the cucumber raita, finish with the remaining coriander and serve with extra lemon wedges for squeezing.

Recipe notes

Tips

  • Rinsing the millet before cooking helps it taste cleaner and keeps the grains fluffy rather than claggy.
  • For a thicker raita, drain the grated cucumber in the colander for 2 minutes, then stir it into the yogurt.
  • If serving to anyone who is pregnant, elderly, or immunocompromised, use pasteurised yogurt and keep the raita chilled until serving.

Substitutions

  • Replace rapeseed oil with olive oil for a fruitier finish.
  • Replace whole milk yogurt with greek yogurt for a thicker, tangier raita.
  • Replace lemon with lime for a sharper citrus note.

Storage

  • Refrigerate up to 3 days
  • Store the millet and roasted cauliflower and chickpeas in an airtight container in the fridge. Keep the raita separate and chilled; reheat the millet and vegetables in the microwave or in a saucepan with a splash of water until piping hot, then add the cold raita just before serving.
