Chicken Katsu Bowl with Sushi Rice and Cabbage
Why this recipe works
- Crisp panko coating: Panko breadcrumbs create a light, craggy crust that fries to a deep golden finish without feeling heavy.
- Balanced textures: Tender rice, crisp chicken and finely shredded cabbage make each bowl feel substantial but fresh.
- Sweet-savoury finish: Tonkatsu sauce adds tangy sweetness and savoury depth, which balances the richness of the fried cutlet.

Ingredient notes
- Use panko, not fine breadcrumbs: Panko gives katsu its airy, crunchy texture; finer breadcrumbs make a denser, less distinctive coating.
- Tonkatsu sauce matters: Japanese-style tonkatsu sauce, including Bulldog-style brown sauce, gives the bowl its familiar sweet, tangy and savoury finish.
- Flatten the chicken evenly: An even thickness helps the chicken cook through at the same pace as the coating browns.
Texture tips
- Start with properly hot oil: The oil should be hot enough that a breadcrumb sizzles on contact before the chicken goes in.
- Sauce just before serving: Drizzle the tonkatsu sauce at the end so the coating stays crisp for as long as possible.
Common mistakes
- Avoid crowding the pan: Too much chicken in the pan lowers the oil temperature and can make the coating greasy rather than crisp.
- Watch the heat: If the breadcrumbs darken too quickly, reduce the heat so the chicken has time to cook through.
- Check the centre: The chicken should be fully cooked through with no pink in the middle before slicing.
Make-ahead tips
- Keep the components separate: Store the chicken, rice and cabbage in separate airtight containers so the coating and cabbage do not soften.
- Reheat for better crispness: Reheat the chicken on a baking tray in a 200°C (390°F) oven until piping hot, then assemble the bowl.
- Assemble at the last minute: Add the cabbage, sauce, spring onion and sesame seeds just before serving for the best texture.

Instructions
- Rinse the sushi rice in a bowl of cold water, swishing gently, then drain; repeat until the water runs mostly clear. Tip into a saucepan with the water and fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- While the rice cooks, finely shred the white cabbage and thinly slice the spring onion. Set both aside for serving.
- Place each chicken breast between two sheets of baking paper and gently bash to an even thickness of about 1.5 cm. Set up a breading line: plain flour in one bowl, eggs beaten in a second, and panko breadcrumbs in a third. Coat the chicken in flour, dip in egg, then press into panko so it is well covered.
- Heat the vegetable oil in a large frying pan over medium heat until a breadcrumb sizzles on contact. Fry the chicken for 4 to 5 minutes per side until deep golden and cooked through, adjusting the heat so the coating does not burn. Lift out and rest for 2 minutes before slicing.
- Divide the rice between two bowls and top with the shredded cabbage. Arrange the sliced katsu on top, drizzle with tonkatsu sauce, then finish with spring onion and roasted sesame seeds. Serve straight away while the chicken is crisp.
Recipe notes
Tips
- For the crispest coating, press the panko firmly onto the chicken and avoid moving it around in the pan until the underside is properly golden.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked all the way through with no pink in the centre.
Substitutions
- Replace Chicken breast with Chicken thighs boneless skinless for a juicier katsu; cook a little longer until fully cooked through.
- Replace Tonkatsu sauce with Bulldog style Japanese brown sauce for a similar sweet-savoury finish.
Storage
- Refrigerate up to 2 days
- Store the chicken, rice and cabbage separately in airtight containers. Reheat the chicken on a baking tray in a 200°C (390°F) oven for 10 to 12 minutes until piping hot, and warm the rice in the microwave with a splash of water; add the cabbage, sauce, spring onion and sesame seeds just before serving.
