Mexican Lentil Bowl with Rice, Salsa and Avocado
Why this recipe works
- Bright, layered flavour: Warm lentils absorb the lime, cumin, garlic and olive oil dressing, giving the base more depth than plain cooked pulses.
- Balanced textures: Soft rice and lentils are balanced by juicy salsa, sweetcorn, creamy avocado and firm black beans.
- Good for preparing ahead: The cooked rice, lentils, salsa and toppings can be stored separately, then assembled just before serving.

Ingredient notes
- Choose lentils that hold their shape: Green lentils are a good choice here because they stay distinct after simmering. Softer lentils can make the bowl feel heavy or mushy.
- Use ripe tomatoes and avocado: Ripe tomatoes give the salsa better sweetness and juice, while a ripe avocado adds the creamy contrast that finishes the bowl.
- Adjust the lime at the end: Add more lime juice if the bowl tastes flat; the acidity sharpens the lentils, salsa and avocado.
Texture tips
- Keep the lentils intact: Simmer the lentils gently and drain them as soon as they are tender so they keep their shape in the bowl.
- Drain well before assembling: Let the lentils, rice, beans and sweetcorn drain properly so the dressing and salsa do not make the bowl watery.
Make-ahead tips
- Store components separately: Keep the rice, dressed lentils, salsa and avocado apart until serving for the freshest texture.
- Reheat the warm elements only: Warm the rice and lentils with a splash of water until piping hot, then add the salsa and avocado after reheating.
- Prep the base in advance: The lentils, rice and bean mixture can be cooked ahead, making final assembly quick.
Serving ideas
- Finish with extra herbs and lime: Fresh coriander and a final squeeze of lime make the bowl taste brighter just before serving.
- Add a simple sauce: A spoonful of yoghurt-style sauce, hot sauce or extra salsa works well if you prefer a looser, saucier bowl.
- Serve with tortilla chips: Tortilla chips add crunch and make the bowl feel more substantial without changing the main preparation.

Instructions
- Rinse the lentils, then tip into a saucepan and cover with plenty of water. Bring to the boil, then simmer for 18 to 22 minutes until tender but still holding their shape. Drain well in a colander and set aside.
- Meanwhile, rinse the rice until the water runs mostly clear. Cook in a pot of boiling water for 10 to 12 minutes until tender, then drain and cover to keep warm. Fluff with a fork before serving.
- Finely dice the onion, crush the garlic, dice the tomatoes, and roughly chop the coriander. In a bowl, mix the tomatoes with half the onion, half the coriander, and a squeeze of lime juice for a quick salsa. Taste and adjust with more lime juice if you like it sharper.
- In the same bowl, whisk the remaining lime juice with the ground cumin and olive oil to make a dressing. Stir the warm lentils through the dressing with the remaining onion and garlic so they soak up the flavour. Leave for 2 minutes for the garlic to mellow slightly.
- Drain and rinse the black beans, then warm them with the sweetcorn in a small saucepan over a low heat for 3 to 4 minutes, just until hot. Halve, stone and slice the avocado. Divide the rice between two bowls, spoon over the dressed lentils, then top with the salsa, beans, sweetcorn, avocado, and the remaining coriander.
Recipe notes
Tips
- For the best texture, keep the lentils at a gentle simmer so they stay intact rather than turning mushy.
- If the onion tastes too sharp, rinse it briefly under cold water, then drain well before adding to the salsa.
- If serving to anyone vulnerable to food poisoning, make sure the beans and sweetcorn are heated until piping hot.
Substitutions
- Replace basmati rice with brown rice for a nuttier flavour and a slightly chewier texture.
- Replace ground cumin with curry powder for a warmer, more aromatic dressing.
- Replace fresh coriander with fresh flat-leaf parsley for a milder, herbier finish.
Storage
- Refrigerate up to 2 days
- Store the rice, lentils, salsa, and toppings in separate airtight containers for the best texture. Reheat the rice and lentils in a saucepan with a splash of water over a low heat until piping hot, then add the salsa and avocado just before serving.
