Tres Leches Cake (Sponge Soaked in Three Milks)

Tres leches cake is one of Latin America’s best-loved chilled desserts: an airy sponge made to absorb a sweet mixture of whole milk, evaporated milk and condensed milk without becoming heavy. Its character comes from that soaked texture — cool, creamy and tender, with the cake still holding its shape in clean slices. A lightly sweetened whipped cream topping keeps the finish soft rather than dense, while vanilla and cinnamon add warmth. It is especially useful as a make-ahead cake, as chilling gives the milk soak time to settle evenly through the crumb.

Why this recipe works

  • Airy sponge base: Whipping the eggs and sugar to a ribbon stage creates the light structure needed to hold the milk soak.
  • Even, creamy crumb: Whole milk, evaporated milk and condensed milk combine sweetness, body and fluidity so the cake becomes moist without turning heavy.
  • Improves as it chills: Resting in the fridge gives the soak time to distribute through the sponge, making the cake easy to prepare before serving.

Timing notes

  • Cool before soaking: Let the sponge cool completely before adding the milk mixture so it absorbs evenly and keeps its structure.
  • Allow a proper chill: The cake needs at least a short fridge rest after soaking; a longer chill gives a more evenly saturated crumb.
  • Serve cold: Tres leches cake is at its best straight from the fridge, when the crumb is set and the cream topping holds neatly.

Ingredient notes

  • Use all three milks: Whole milk loosens the soak, evaporated milk adds dairy depth, and condensed milk provides sweetness and body.
  • Start with room-temperature eggs: Room-temperature eggs whip more readily, helping the sponge become light enough to take on the milk soak.
  • Chill the cream well: Cold double cream whips more reliably and gives a soft, stable topping for the chilled cake.

Make-ahead tips

  • Soak in advance: Bake, cool and soak the cake ahead of time, then keep it covered in the fridge until needed.
  • Add the topping later: For the neatest finish, spread over the whipped cream shortly before serving rather than storing the cake fully topped for too long.
  • Good for next-day serving: The texture becomes more even after resting, making this a practical dessert to make the day before.

  1. Heat the oven to 170°C (340°F). Grease a cake tin and line the base if you like for easier lifting.
  2. Whisk the flour, baking powder and salt together in a bowl. Set aside while you whip the eggs.
  3. In a large bowl, beat the eggs with the sugar for 6 to 8 minutes until very pale, thick and ribboning. Beat in the vanilla.
  4. Sift the dry ingredients over the egg mixture in two additions, folding gently each time until no floury streaks remain. Scrape into the tin and level the top.
  5. Bake for 25 to 30 minutes until golden and springy, and a skewer comes out clean. Cool in the tin for 10 minutes, then turn out and cool completely.
  6. Return the cooled cake to the tin (or a deep dish) and prick all over with a skewer. Whisk the whole milk, evaporated milk, sweetened condensed milk and cinnamon until smooth.
  7. Pour the milk mixture over the cake slowly, letting it soak in between pours. Cover and chill for at least 2 hours so the cake absorbs the milks fully.
  8. Whip the double cream with the sugar, vanilla and cinnamon to soft peaks. Spread over the chilled cake and serve cold in slices.

Recipe notes

Tips

  • For the lightest sponge, make sure the eggs and sugar are whipped until the mixture holds a ribbon on the surface for a few seconds before you fold in the flour.
  • Pour the milk soak slowly and evenly, focusing on the edges first, as they tend to absorb less quickly than the centre.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised eggs.

Substitutions

  • Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
  • Replace Ground cinnamon with speculaas spice mix for a more festive, spiced topping.

Storage

  • Refrigerate up to 3 days
  • Keep covered in the fridge and serve cold. For best texture, add the whipped cream topping shortly before serving; if already topped, the cake will still keep well but the cream may soften slightly.
