Fraisier (French Strawberry Cream Cake)

Fraisier, the classic French strawberry cream cake, is known for its polished patisserie finish: neat rows of fresh strawberries set against the sides, light génoise sponge and a rich vanilla crème mousseline that firms as it chills. Traditionally assembled in a ring, it relies on careful layering rather than heavy decoration, giving clean slices with visible fruit and cream. The marzipan top adds a smooth almond note and a refined finish. It is an advanced but highly rewarding dessert for spring or summer occasions, best served well chilled so the mousseline stays stable and the strawberries remain fresh and bright.

Why this recipe works

  • Defined layers: Light sponge, firm strawberries, silky mousseline and a soft marzipan top create the clean structure that makes a fraisier recognisable.
  • Classic construction: Assembling the cake in a ring keeps the strawberries aligned against the sides and gives the finished cake its sharp patisserie-style edge.
  • Stable cream filling: Pastry cream enriched with butter and set with gelatin gives the mousseline enough body to slice neatly after chilling.

Timing notes

  • Chill until fully set: The cake needs enough time in the fridge for the mousseline to firm up; slicing too soon can cause the layers to shift.
  • Serve cold: Cut and serve straight from the fridge for the neatest slices, as the marzipan and cream soften at room temperature.

Common mistakes

  • Avoid split mousseline: Let the pastry cream cool to room temperature before beating it into the butter; warm cream can loosen or split the mixture.
  • Protect the sponge: Fold the flour and butter into the whipped eggs gently so the génoise keeps its volume and bakes up light.
  • Do not rush assembly: Cool the sponge completely before building the cake, otherwise the filling can soften and lose definition.

Ingredient notes

  • Choose firm strawberries: Ripe but firm strawberries hold their shape against the ring and give the cake its clean, decorative edge.
  • Use good vanilla: A vanilla bean gives the mousseline a rounded flavour, but good vanilla extract can be used if added after heating the milk.
  • Egg safety: Use pasteurised eggs where available if serving anyone who is pregnant, very young, older, or immunocompromised.

Make-ahead tips

  • Assemble in advance: The cake can be assembled earlier in the day and kept covered in the fridge until ready to serve.
  • Best within two days: Fraisier keeps well chilled for up to two days, but the strawberries and marzipan are at their best before they soften.
  • Keep it cold: Store covered in the fridge and slice while chilled for the cleanest finish.

  1. Heat the oven to 180°C (355°F). Grease and line a 20 cm cake tin, then melt the butter and leave it to cool until just warm.
  2. Put the eggs and caster sugar in a heatproof bowl set over a saucepan of barely simmering water and whisk until the mixture is warm and the sugar has dissolved. Remove from the heat and whisk with a stand mixer until very pale, thick, and the ribbon holds for a few seconds.
  3. Sift in the flour and fold gently until no dry streaks remain. Fold in the melted butter, keeping as much air in the batter as possible.
  4. Pour into the tin and bake for 22 to 26 minutes, until golden and springy and a skewer comes out clean. Cool in the tin for 10 minutes, then turn out and cool completely on a rack.
  5. For the mousseline, soak the gelatin sheets in cold water until softened. Split the vanilla bean, scrape out the seeds, then heat the milk with the seeds and pod until steaming; cover and leave to infuse for 10 minutes.
  6. Whisk the eggs, caster sugar, and cornflour in a bowl until smooth. Reheat the milk to steaming, then whisk it into the egg mixture in a steady stream; return everything to the saucepan and cook over medium heat, whisking constantly, until thick and bubbling for 1 minute.
  7. Take off the heat, remove the vanilla pod, then squeeze excess water from the gelatin and whisk it into the hot pastry cream until fully dissolved. Spread the cream in a shallow dish, cover the surface directly, and cool to room temperature.
  8. Beat the softened butter until very smooth and pale. Add the cooled pastry cream a spoonful at a time, beating until silky and stable; keep at cool room temperature so it stays pipeable.
  9. Trim and halve enough strawberries to line the inside of a 20 cm ring, keeping the cut sides neat. Slice the génoise horizontally into two even layers.
  10. Place the ring on a serving plate and set one sponge layer in the base. Arrange the halved strawberries cut-side out around the edge, pressing them gently against the ring.
  11. Pipe a layer of mousseline to fill the gaps around the strawberries, then spread a thin layer over the sponge. Add more strawberries in the centre, then cover with mousseline and smooth the top.
  12. Set the second sponge layer on top and press very gently to level. Chill until fully set and sliceable, at least 2 hours.
  13. Make the marzipan by mixing the ground almonds and icing sugar, then work in the egg until a smooth paste forms. Roll it into a thin round slightly larger than the cake, then trim to fit the top.
  14. Unmould the cake by warming the ring briefly with your hands, then lift it away. Lay the marzipan on top, smooth lightly, and return to the fridge for 10 minutes before slicing and serving well chilled.

Recipe notes

Tips

  • For clean slices, chill the assembled cake until the mousseline feels firm to the touch, then cut with a long knife dipped in hot water and wiped dry between cuts.
  • When making the mousseline, make sure the pastry cream is fully cooled to room temperature before beating into the butter, otherwise the mixture can split.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised eggs where available.

Substitutions

  • Replace Strawberry with raspberry for a different berry fraisier style, keeping the same total weight.
  • Replace Vanilla bean with 2 tsp vanilla extract, whisked into the hot milk after heating.

Storage

  • Refrigerate up to 2 days
  • Keep covered in the fridge and serve well chilled. For the neatest slices, cut straight from the fridge; the marzipan will soften if left at room temperature for long.
