Zaalouk (Smoky Aubergine and Tomato Salad)
Why this recipe works
- Built-in depth: Roasting the aubergine before simmering gives the salad a smoky base without needing many ingredients.
- Bright finish: Tomato and lemon cut through the richness of the olive oil and soften the sweetness of the aubergine.
- Flexible serving: The thick, spoonable texture works warm, at room temperature, as a dip with bread or as part of a larger spread.

Ingredient notes
- Choose firm aubergines: Look for aubergines with glossy skin and no soft spots; they roast down to a cleaner, less watery flesh.
- Use ripe tomatoes: Ripe tomatoes give the salad better sweetness and acidity, helping the simple spice base taste fuller.
- Fresh herbs matter: Fresh coriander adds lift at the end; flat-leaf parsley is a milder alternative if preferred.
Texture tips
- Reduce until spoonable: Keep simmering gently until the mixture is thick enough to hold its shape on a spoon rather than spreading into liquid.
- Cook off excess moisture: Aubergine and tomato both release water, so the final simmer is important for a concentrated, dip-like finish.
- Mash as it cooks: Press the aubergine with the spoon during simmering for a softer, more cohesive texture while keeping a rustic finish.
Authenticity notes
- Cooked salad style: Zaalouk is typically served as a cooked salad or dip rather than a raw salad, with the vegetables softened into a savoury spread.
- Serve with bread: Bread is the natural partner, used to scoop up the thick aubergine and tomato mixture.
Make-ahead tips
- Make ahead: Zaalouk keeps well in the fridge and can be served at room temperature, making it useful for mezze-style meals or appetiser spreads.
- Reheat gently: Warm it in a saucepan over low heat, stirring often, until piping hot if serving after refrigeration.
- Freeze after cooking: Cool completely before freezing, then defrost overnight in the fridge and reheat gently before serving.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Prick the aubergines all over with a fork, set on a baking tray, and roast for 30 to 40 minutes until collapsed and very soft.
- Meanwhile, peel and finely grate the garlic. Roughly grate the tomatoes into a bowl, discarding the skins if you like, and stir in the cumin and paprika.
- When the aubergines are cool enough to handle, split them open and scoop out the flesh. Roughly chop the flesh so it is easy to mash later.
- Warm the olive oil in a saucepan over medium heat, then add the garlic and cook for 30 to 60 seconds until fragrant. Tip in the tomatoes with the spices and simmer for 10 minutes, stirring now and then, until slightly reduced.
- Add the aubergine flesh and simmer for 10 to 15 minutes, stirring and mashing with the spoon, until the mixture is thick, spoonable, and no longer watery. If it starts to catch, lower the heat and stir more often.
- Finely chop the fresh coriander and stir most of it through the zaalouk. Squeeze in lemon juice to taste, then let it stand for 5 minutes before serving warm or at room temperature, topped with the remaining coriander.

Serving suggestions
This recipe pairs well with:
Tips
- For a deeper smoky flavour, roast the aubergines until the skins are well darkened and the flesh is completely soft.
- Keep the simmer gentle and stir often towards the end so the zaalouk reduces without sticking; it should finish thick enough to hold its shape on a spoon.
- If serving to vulnerable groups, ensure the dish is reheated until piping hot if it has been stored in the fridge.
Substitutions
- Replace sweet paprika with smoked paprika for an even smokier finish.
- Replace fresh coriander with fresh flat-leaf parsley for a milder, greener flavour.
- Replace lemon with lime for a sharper citrus note.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat, stirring, until piping hot, or serve at room temperature; freeze for up to 2 months and defrost overnight in the fridge before reheating.
