Scallops with Cauliflower Purée and Crispy Pancetta
Why this recipe works
- Clear texture contrast: Silky cauliflower purée, tender scallops and crisp pancetta give the plate definition without needing many ingredients.
- Brightness against richness: A final squeeze of lemon cuts through the butter, cream and pancetta, keeping the dish balanced.
- Polished presentation: Serving the scallops over a smooth purée creates an elegant plate with a simple, manageable workflow.

Timing notes
- Serve straight away: Scallops are at their best immediately after searing, while the surface is caramelised and the centre is just opaque.
- Prepare before searing: Have the purée warm and the pancetta crisp before the scallops go into the pan, as they cook very quickly.
Texture tips
- For a smoother purée: Drain the cauliflower well and let it steam-dry briefly before blending so the purée stays thick and silky.
- For better searing: Pat the scallops thoroughly dry before seasoning; excess moisture prevents a good golden crust.
Common mistakes
- Overcooking the scallops: Scallops can turn rubbery if left too long in the pan; remove them once caramelised outside and opaque in the centre.
- Boiling the cream purée: Keep the purée over very low heat once the cream is added, as boiling can spoil its smooth texture.
Ingredient notes
- Choosing scallops: Use plump, good-quality scallops and check that they smell fresh and clean rather than strongly fishy.
- Cream choice: Double cream gives the purée its richest texture; single cream can be used for a lighter result but may need gentler thickening.

Ingredients
Instructions
- Cut the cauliflower into small florets and peel the garlic. Bring a saucepan of water to the boil and season it with half the salt.
- Boil the cauliflower with the garlic for 10 to 12 minutes, until very tender. Drain well in a colander, then let it steam-dry for 2 minutes so the purée stays silky rather than watery.
- Blend the cauliflower and garlic with the double cream and half the butter until completely smooth. Taste and season with a pinch more salt if needed, then keep warm over a very low heat.
- Set a large frying pan over a medium heat and fry the pancetta for 4 to 6 minutes, turning, until deeply golden and crisp. Lift out with tongs and keep warm; leave the fat in the pan.
- Pat the scallops dry and season with the remaining salt and the black pepper. Increase the heat to medium-high, add the remaining butter, then sear the scallops for 60 to 90 seconds per side until caramelised and just opaque in the centre.
- Divide the cauliflower purée between two warm plates and top with the scallops. Scatter over the crispy pancetta and finish with a squeeze of lemon to taste.
Recipe notes
Tips
- Dry scallops sear best: pat them thoroughly with kitchen paper so they caramelise rather than steam.
- Keep the purée warm on the lowest heat and stir occasionally; avoid boiling once the double cream is added.
- Food safety: scallops should be cooked until opaque and hot throughout; avoid serving undercooked shellfish to pregnant people, young children, older adults, or anyone immunocompromised.
Substitutions
- Replace Pancetta with Bacon for a similar salty crunch.
- Replace Double cream with Single cream for a lighter purée, simmering gently for 1 to 2 minutes longer to thicken.
- Replace Lemon with Lime for a sharper, more aromatic finish.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If needed, refrigerate the purée and toppings separately in airtight containers; reheat the purée gently in a saucepan with a splash of water until piping hot, and briefly re-sear the scallops in a hot pan to warm through without overcooking.
