Gluten-Free Chicken Pot Pie

With its creamy chicken-and-vegetable filling under a golden pastry lid, chicken pot pie is comfort food in a deeply practical form: savoury, spoonable and satisfying without needing much alongside it. This gluten-free version keeps the familiar character of the American-style pie, using tender chicken thighs, softened onion, carrot, celery and peas in a smooth gravy thickened with cornflour, then finishing it with a crisp gluten-free shortcrust top. Dijon mustard and fresh thyme add quiet depth, while a short rest after baking helps the sauce settle so each serving holds together without losing its rich, homely feel.

Why this recipe works

  • Smooth, creamy filling: Cornflour thickens the stock and milk into a glossy gravy that coats the chicken and vegetables without relying on wheat flour.
  • Crisp pastry contrast: A pastry lid gives the pie a golden, flaky top while keeping the filling soft, savoury and spoonable underneath.
  • Classic comfort-food balance: Tender chicken, sweet vegetables, thyme and mustard create a familiar savoury flavour with enough brightness to keep the sauce from feeling heavy.

Timing notes

  • Let it stand before serving: Resting the pie for 10 minutes helps the gravy settle, making it easier to spoon without losing the creamy texture.
  • Best served hot: The pastry is at its crispest shortly after baking, while the filling should still be piping hot and bubbling at the edges.

Texture tips

  • For a crisper lid: Add the pastry over hot but not vigorously boiling filling, then bake until deeply golden rather than just lightly coloured.
  • Avoid a soggy top: Cut a small steam hole in the centre of the pastry so moisture can escape during baking.

Make-ahead tips

  • Make the filling in advance: The chicken and vegetable filling can be cooked ahead, cooled completely and refrigerated, then topped with pastry before baking.
  • Reheat gently: Reheat leftovers in a 180°C (355°F) oven until piping hot, covering loosely if the pastry browns before the centre is heated through.
  • Freeze in portions: Cooked portions freeze well; defrost overnight in the fridge before reheating thoroughly.

Ingredient notes

  • Use chicken thighs for tenderness: Boneless, skinless thighs stay juicy during simmering and baking, making them well suited to a creamy pie filling.
  • Adjust if using chicken breast: Chicken breast works as a leaner option, but it cooks faster and can dry out if simmered for too long.
  • Dice vegetables evenly: Small, even pieces of onion, carrot and celery soften at the same rate and distribute neatly through the gravy.

  1. Heat the oven to 200°C (390°F). Take the pastry out of the fridge so it softens slightly while you make the filling.
  2. Peel and finely dice the onion, then peel and dice the carrots. Trim and dice the celery.
  3. Melt the butter in a large frying pan over a medium heat. Add the onion, carrot and celery with 0.5 tsp of the salt and cook for 8 to 10 minutes, stirring, until softened and lightly golden.
  4. Cut the chicken into bite-sized pieces, then add to the pan with the pepper and remaining salt. Cook for 5 to 7 minutes, stirring, until the chicken is mostly opaque on the outside.
  5. Sprinkle over the cornflour and cook for 1 minute, stirring well so it coats the chicken and vegetables. Gradually whisk in the stock, then the milk, until smooth.
  6. Add the mustard and thyme sprigs, then bring to a gentle simmer. Cook for 10 to 12 minutes, stirring often, until the sauce is thick enough to coat the back of a spoon and the chicken is cooked through.
  7. Stir in the peas and cook for 2 minutes, just until hot. Remove the thyme sprigs, then tip the filling into a baking dish.
  8. Roll the pastry on a lightly floured surface (use a little cornflour) to about 3 to 4 mm thick, then lay it over the dish and trim the edges. Crimp to seal, cut a small steam hole in the centre, and bake for 25 to 30 minutes until deep golden and bubbling at the edges.
  9. Leave the pie to stand for 10 minutes before serving so the sauce settles. Serve hot.

Recipe notes

Tips

  • For the crispest lid, make sure the filling is hot but not boiling when you add the pastry, then bake on the middle shelf until well browned.
  • If you have a thermometer, the chicken is safely cooked when the thickest pieces reach 75°C (165°F).
  • If serving vulnerable groups, use pasteurised milk and ensure the pie is piping hot all the way through before serving.

Substitutions

  • Replace Chicken thighs with Chicken breast for a leaner filling; reduce the simmering time by 2 to 3 minutes to keep it tender.
  • Replace Fresh thyme with Fresh rosemary for a more robust, piney flavour; use 2 sprigs and remove before baking.
  • Replace Low-fat milk with Whole milk for a richer sauce.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then cover and refrigerate for up to 3 days. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; cover loosely if the pastry browns too quickly. Freeze portions for up to 2 months and defrost overnight in the fridge before reheating.
