Gougères (French Cheese Puffs)
Why this recipe works
- Classic choux method: Cooking the flour with milk and butter creates a structured paste that expands in the oven without yeast or raising agents.
- Crisp, hollow finish: Drying the dough on the hob and finishing the puffs in the switched-off oven helps the shells set and reduces excess moisture.
- Savoury depth: Gruyère brings nuttiness, while Dijon mustard and black pepper sharpen the rich cheese flavour without making the pastry heavy.

Timing notes
- Cool before adding egg: Let the hot dough cool briefly before adding the egg so it incorporates smoothly and does not scramble.
- Serve warm: Gougères are at their best warm from the oven, when the shells are crisp and the cheese flavour is most pronounced.
Common mistakes
- Adding egg too quickly: Add the egg gradually and stop when the paste falls from the spoon in a thick V shape; too much egg can make the puffs spread.
- Opening the oven early: Avoid opening the oven before the structure has set, as a sudden drop in heat can make the gougères collapse.
- Baking too pale: The puffs should be deeply golden and crisp, not just lightly coloured, or the centres may remain damp.
Ingredient notes
- Use a good melting cheese: Gruyère gives the classic nutty flavour, while Emmental makes a milder alternative with a similar melt.
- Whole milk adds richness: Whole milk helps create a tender, rounded pastry with a richer flavour than a leaner liquid would provide.
- Room-temperature egg helps: Egg that is not fridge-cold blends more easily into the warm choux paste and gives a smoother consistency.
Make-ahead tips
- Freeze after baking: Cool the gougères completely, then freeze airtight and reheat from frozen on a baking tray until hot and crisp.
- Refresh in the oven: Reheat refrigerated gougères at 180°C (355°F) rather than microwaving, which can soften the crisp shells.

Ingredients
Instructions
- Heat the oven to 200°C (390°F) and line a baking tray. Grate the Gruyère cheese and set it aside. Crack the eggs into a bowl and whisk lightly so they are easy to add.
- Put the whole milk, unsalted butter and fine sea salt into a saucepan over medium heat and bring just to a boil. Tip in the plain flour all at once and beat vigorously with a wooden spoon until a smooth dough forms and pulls away from the sides. Keep cooking, stirring constantly, for 1 to 2 minutes to dry the dough slightly.
- Scrape the dough into a mixing bowl and leave for 3 to 4 minutes so it cools slightly. Add the egg a little at a time, beating well after each addition, until the paste is glossy and falls from the spoon in a thick V shape; you may not need the very last spoonful. Beat in the Dijon mustard and black pepper.
- Fold in most of the Gruyère cheese, reserving a small handful for topping. Spoon or pipe heaped teaspoons of the mixture onto the tray, leaving space for expansion. Sprinkle the reserved cheese over the tops.
- Bake for 22 to 26 minutes until well risen, deeply golden and crisp. Turn off the oven, crack the door open slightly, and leave the gougères inside for 5 minutes to help them dry out. Serve warm.

Serving suggestions
This recipe pairs well with:
Tips
- For the best rise, make sure the milk and butter come to a full boil before adding the flour, then beat hard until the dough forms a smooth ball.
- Avoid opening the oven during the first 18 to 20 minutes, or the gougères can collapse before they set.
- If serving to anyone vulnerable, ensure the gougères are baked until fully set and piping hot throughout, as the mixture contains egg.
Substitutions
- Replace Gruyère cheese with Emmental cheese for a slightly milder, nuttier flavour.
- Replace Dijon mustard with whole-grain mustard for a gentler heat and a little texture.
Storage
- Refrigerate up to 2 days
- Cool completely, then store airtight. Reheat on a baking tray at 180°C (355°F) for 6 to 8 minutes until hot and crisp; from frozen, bake for 10 to 12 minutes.
